Ola! Had the family in yesterday - fed them a magnificent Mexican feast, almost all made from absolute scratch:
Chilli beef burritos - 150kcals
Chicken, peppers and lime burritos - 160kcals
Prawns, lime and coriander burritos - 100 kcals
Taco shells to use up any leftover burrito filling - filled kcals as for burritos
refried beans - 120kcals
Bought cooked salsa - hardly any
Raw salsa - just tomatoes, spring onions and coriander
Creme fraiche with lime - 44 kcals per 100ml
Fruit salad: mango, papaya, orantique and boozy pineapple with raspberry balsamic vinegar, pomegranate molasses and no fat yoghurt - less than 100kcals
The only truly bad bit was the obligatory burying of the burritos in cheese! Oh and the buckets of red wine. So I totally blew all the goodness of the meal!
The trick is to make skinny burritos and line a oven dish with them lying across the short width, then load on the grated cheese 50-50 mozzarella and cheddar. Take them out of the oven and cut them down the middle lengthways. Then when you take one you are actually only taking half of one (that's how the kcals above are counted, per half serving).
So then I got on the scales this afternoon, when everyone had gone away again - Oh YES!!!!! Down 1.4 pounds!
Cos you can have 2 or 3 flavours and appear to be taking a lot I find I take as many burrito halves as I would whole ones - so that halves my kcals for the meal immediately. Add onto that the amazing textures and tastes of the salsas you do tend to load up on salad too!
I am sooooooooo grateful to low fat, high taste, fun to make and eat food writers!!!!
