1 lb boneless skinless chicken breast halves
1 1/2 cups sliced mushrooms (4 oz)
1 cup baby cut carrots
1 1/2 cups water
1 pkg (4.1 oz) long grain and wild rice mix with chicken and herbs
Cut chicken into 1 inch pieces. Spray a nonstick skillet with nonstick cooking spray. Heat skillet over medium heat then add chicken. Stir and cook until chicken is no longer pink inside, about 5 minutes. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 15 minutes, stirring occasionally. Uncover and simmer about 3 or 4 more minutes, stirring occasionally, until carrots are tender.
