1 cup orange juice
1/4 cup lime juice
5 canned chipotle peppers, minced, plus 1 Tbsp. juice
4 cloves garlic, minced
1 tsp. grated orange zest
2 tsp. dried oregano
1 tsp. cumin seeds
2 Tbsp. wine vinegar
1/2 tsp. each salt and fresh ground black pepper
Combine the orange juice and lime juice in a saucepan and boil until reduced to about 1/2 cup. Place this with remaining ingredients in a blender and puree until smooth. Spread this paste on food to be marinated.
If using seafood, marinate 2 hours. Marinate poultry 4 hours, and marinate meat overnight.
Makes 1 cup, or enough for 1 1/2 to 2 pounds of seafood, poultry, or meat.
