Cheesy Chicken Enchiladas

recipe ingredients
1 cup chopped onion
1 1/2 cups shredded cooked chicken breast
1 cup (4 ounces) shredded reduced-fat sharp Cheddar cheese
1 cup bottled picante sauce
3 oz. 1/3-less-fat cream cheese
1 tsp. ground cumin or chili powder
8 (6-inch) flour tortillas
1 1/2 cups bottled green taco sauce

recipe directions
Preheat oven to 350*F.

Spray a large nonstick skillet with cooking spray and heat over medium heat until hot. Add onion, and saute until tender, about 5 minutes. Add the shredded chicken, 1/2 cup of the cheddar cheese, picante sauce, cream cheese, and cumin. Cook 3 minutes or until cheese melts, stirring constantly. Place about 1/3 cup of the chicken mixture down the center of each tortilla and roll up. Place in a 9 x 13 inch baking dish which has been sprayed with nonstick cooking spray. Pour the taco sauce evenly over top, and sprinkle with remaining 1/2 cup of cheddar cheese. Cover and bake at 350*F for 15 minutes or until cheese melts.

    Tried this last night and it was amazing!! Highly recommended, tastes better than most restaurant Enchilada’s I have experienced…even in Mexico!!! Yummy.

    This was SO good. It’s pretty hot (the bottled green sauce has lots of jalepino peppers.) My husband loves hot food and thought this was great. Ate this with yellow squash as a side dish.

    This meal was sooo good. My kids thought it was a bit spicy but my husband love it! It was fairly easy to make and quite filling.

    tried this recipe over the weekend, it’s a keeper for WW recipes. I did however, change it just a little. I used Fat Free Tortilla’s and added 1 can pinto beans and 1 Cup frozen corn. I didn’t change to point value, but it really bulked it up and was so tasty and satifying

    My family and I LOVE this recipe! Even my youngest, he’s 3. I substituted our favorite hot taco sauce for the green taco sauce and totally omitted the hot stuff on the kids’ portions, and we love it!

    Tried this recipe this week. Very good! My husband said ‘it’s a keeper’. I substituted the green taco sauce for regular salsa and it was very good.

    This recipe was very good. I modified it a little because some of the ingredients were hard to find in Rhode Island. I also added jalapeno’s.

    WOW!! This is absoutely wonderful!! My husband was shocked to learn it was low fat. I used corn tortillas and regular taco sauce instead. it was great!

    VERY GOOD & filling!!! easy to do! I made it for my husband and myself. I thought one would not be enough and I was wrong. Good leftovers for lunch.

    Very hard to tell this is a low fat/low calorie recipe! I almost felt like I was cheating eating it, it was THAT good! I hate cutting onions so I used the frozen ones and added just a handful of frozen corn for color. We don’t have any children but my husband LOVED it! (Me too.) We just started eating better for the new year and this was one of the first recipes I tried. It is definetly a keeper! I’m already looking forward to making it again. Even if we weren’t trying to lose weight, I would make these. I can’t tell you how good they are! You have to try them to believe it.

    About a year ago I started a diet and was cooking a lot of low fat meals. Well, my husband, who is a big meat and potatoes guy, was very good about tasting most of the new recipes. This one by far is his favorite. He asks to have this meal on a regular basis since he enjoys it so much. We definitely give it a 10!

    these were just delicious! i made them for hubby and he said they were “perfect.” I thought they were a little spicy, but I used medium salsa in place of the picante, and mild enchilada sauce in place of the green taco sauce. I used 1 tsp low-sodium taco seasoning instead of the cumin/chili powder. We ate them all! (him and I) will be making again SOON!

    I made these last night and they were absolutely delicious! I used regular taco sauce instead of the green variety since our store did not carry it and I also added spinach. My husband and I thought they were the best enchiladas we have ever had!

    This was my first recipe to try from here. I have to say that it came out great. Very tasty! I’m trying to lose a few pounds, but of course my husband can eat whatever he wants and not gain an ounce, so he hates when I cook a low carb or low calorie meal because most of them have no taste. However, he loved this one and we’ll be eating the leftovers tonight.

    These were awesome! I didn’t even bake them. I just put a tortilla shell in another skillet, put some cheese on it, put the chicken mixture down the center, closed the shell and ate it. This is keeper!

    Wow. This is absolutely delicious. I changed up the recipe a bit and used Fat free cheeses, Fat Free tortillas, and added a small can of chopped green chiles for extra flavor. My husband who is a very picky eater, gave it a thumbs up!

    This is a really easy and GREAT receipe. My whole family loves them, even my two year old! I make it with spanish rice and they all gobble it up. Double the receipe and it is great for a crowd!

    I’m Hispanic and love my own recipe but it’s too fattening now that I’ve adopted this healthy lifestyle, they are the type you fry in oil, delicious but fattening. I tried these and was totally surprised that I loved them. I didn’t know what brand of sauce to use as called for as I always make my own so I use a combination of the Pace Sauces. I used the hot sauce to mix with the chicken and a half and half with the hot and mild for the topping. I don’t know how this changes the caloric values, if at all, but it was tasty. Thank you for sharing. It will be added to my “must repeat” recipe line-up. :)

    These are sooooooooooo good.. I used white cheddar cheese because I had a block of it in the fridge, I just chopped it up before I added it.. I used really low cal tortillas which usually don’t taste that great, but with these the filling was so tasty that I didnt even notice :)

    I’ve made this a few times and love it! My husband will eat anything and is not picky at all which makes it hard to find something he really likes. Well this is one recipe that he loves! I’ve made it for a few other people and they all love it as well. My husband took left overs to work and almost didn’t get them, everyone else wanted it!!! Worth trying and you will see for yourself, they are easy too!

    This is one of my favorite weight watcher recipes by far!! I used fat-free cheddar cheese and fat-free cream cheese and it still tasted great. Everyone loved them, even the people who hate low-fat foods!! I also couldn’t find green taco sauce so I used regular.

    This is so yummy! I added a can of diced green chiles and used green enchilada sauce instead of the taco sauce. I also substituted fat-free cream cheese. Oh my! My husband will love these! Thanks for the recipe!

    This was wonderful! Wasn’t TOO spicy. It was perfect. The green taco sauce gave this dish a certain twang, too. Instead of cream cheese, we used sour cream, as it was what we had on hand. I want to experiment with the sauce on top and add some sour cream to that too, but it is fine the way it is right now!

    Just a tip: If you use fat-free cheddar cheese and fat-free cream cheese, it comes out to 4 points per serving. I entered it into the WW recipe builder. And it still tastes incredible!

    I just served these to my family(4boys ages 15-25 & my husband) I had to double the recipe and instead of using the picante sauce I used Rotel tomatoes and I also used red taco sauce over the top.
    It is now in my all time favorite personal recipe file everyone loved it, I should have made more. Next time. Really, really good!!!

    Very good. Thumbs up. Would never know it was a low cal recipe. Substituted the green taco sauce for regular red taco sauce because I couldn’t find the green. Was awesome! Will definitely fix again.

    DON’T use picante sauce like it says…use canned enchilada sauce instead with maybe just a little bit of the picante added in. Otherwise, you’re lookin’ for some fire in your throat! =P Other than that little fix, they’re very good!! I’d make them again…

    This is such a great recipe. My husband and I are so excited to eat it whenever we make it. We make it over and over and then can’t wait until the next time we make it. It’s flat out delicious and a wonderful low fat and low calorie alternative for all lovers of Mexican food.

    This recipe is great! I’m doing Weight Watchers & have a hard time finding recipes that don’t taste “diet”. Not only does this one NOT taste “diet”, but I actually felt like I was cheating! Will absolutely make this one over & over. I used canned green enchilada sauce instead of picante though, because I’m not much of a spicy person, but if you are, go for it!

    I made this dish last night and my family loved it. It is spicy so if you have children I would just use enchilada sauce instead of the green taco sauce. It is a keeper though.

    This is one of my favorite meals and I make it sometimes once a week! I also use fat free tortillas (which are still really delicious) and use mild picante and green taco sauces, since I don’t like things hot. I cannot believe it is low-fat. It is much more delicious than any enchiladas I’ve ever had at a restaurant!

    This recipe is good but be warned: The recipe has you adding 1 cup of hot (picante) sauce. This is A LOT of hot sauce, far too much. I am a fan of hot sauce and use it on everything, but this was almost unbearable. Use much less than 1 cup. Trust me.

    We invited a family over for dinner last night and this was our main dish. Loved the filling however, I think next time we will pass on the green sauce. Several of us took the filling out and placed it in a regular totillia. Love the flavor but, if you have kids make sure you use mild picante it was a little spicy but that was fine with me!

    these were amazing! i omitted the onion since the salsa i used had onion in it already. i also used trader joes enchilada sauce instead of the green taco sauce. you gotta make these- you won’t regret it!

    I’ve been making these for two years! they’re great! my family loves them! I use taco sauce or salsa instead of the green taco sauce. they don’t taste diet at all!!!

    Everyone LOVES this. They have no idea it is low fat. On the side, I serve with fat free refried beans topped with taco bell sauce and shredded cheese.

    The family loved this. It was easy to make we put the raw chicken, picante sauce & onion all in the pressure cooker together it only took all of 15 minutes. I made it with brown rice, added the rest of the pincate, 1 tsp of Cumin & black beans as a side.
