I found out about chayote on this forum ... Rainbow Smiles' recipe thread had it, I used this recipe but I didn't have the same Torani syrups as she does. Basically I peel it (Be careful! she mentions that it is slippery but still I slipped with the peeler and cut myself), remove seed, slice it. I add lemon juice (for that apple-y sourness) and a LOT of cinnamon. Microwave around 6-7 minutes. Add Walden Farms pancake syrup.
I like the Nashua brand (Healthsmart) for pancakes. I almost always add cinnamon to them and usually either cauliflower or shredded zucchini (microwaved first so it's not too crunchy) then use the WF pancake syrup, which is one of the few WF products that I have found to be edible. I looked through my notes - I have tried the ProtiDiet pancakes and found them to be ok, but really sweet. Good luck finding new things to try. This thread and the Alternatives threads are SO useful
I like Healthsmart's also. But, note that it is a smaller serving size from IP. Having said that, I am exclusively using Quest's products now. They are so versatile - I make bread, cookies, cake, muffins and pancakes/French toast with their powders.

I want to try the Pancakes, and I know everything does not taste good, that is why its good to know what people like best.
Love the HealthSmart pancakes - so much better than the IP equivalents or the ProtiDiet ones. Only drawback is that they need to be "fluffed" up with a blender or they flatten a lot during cooking, but the taste is easily the best.

Interesting - I hadn't thought about using a protein powder for pancakes ... I like this idea! There is nothing special about the HealthSmart etc packet pancakes... I usually doctor them up anyway so the mix is mostly a binder with protein in it. Do you think the price per serving ends up comparable? HS is usually ~$12/7 = $1.71 each. [ETA: Nevermind, I looked it up. Quest protein powders (~$40 for 2 lbs) end up at $1.25 per serving. Cool!]
