1 cup finelly chopped zucchini
1 cup finely chopped tomato
1 clove garlic, minced
2 tsp. olive oil
1 tsp. balsamic vinegar
salt and fresh cracked pepper to taste

Combine all ingredients and chill well. Makes about 8 servings of 1/4 cup each. Serve with grilled fish or chicken, use on a sandwich, or serve with crackers or fresh veggies as a dip.
