Barbecue Roasted Salmon

recipe ingredients
1/4 cup pineapple juice
2 tablespoons fresh lemon juice
4 (6-ounce) salmon fillets
2 tablespoons brown sugar
1/2 teaspoon chipotle powder
2 teaspoons grated lemon rind
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

Cooking spray

Combine first 3 ingredients in a zip-top plastic bag; seal and marinate in refrigerator 1 hour, turning occasionally. Preheat oven to 400*F.Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar through cinnamon) in a bowl. Rub over fish; place in an 11 x 7-inch baking dishcoated with cooking spray. Bake at for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired.

    I make this all the time! I like this one better than the Cooking Light version because I prefer chipotle over cumin. I don’t use as much chipotle as it calls for, though. I buy salmon fillets from Sams Club and thaw out just one at a time, and mix a small amount of the seasoning mixture. I’ve made the full recipe and have frozen the cooked fillets with success. Broken pieces of leftovers are good on a salad, or on a toasted bun with smoked cheese and light mayo.

    I’ve been making this recipe for awhile now. It’s out of Cooking Light magazine. (which by the way is a great magazine. I’ve been subscribing to it for years.) The salmon is absolutely fabulous! You will make it over and over again.

    I tried this recipe and my husband’s first comment was mmmmmm good. I never mentioned I was trying something new. Didn’t have chipotle (didn’t know what it was, so it was omitted), but I don’t think that made any difference, it was the cinnamon, brown sugar taste that added such a nice flavour to the salmon.

    I make this all the time now and I have a million other salmon recipes. I recommend it to serve to guests it’s that terrific.

    I tried this, and the salmon never “flaked.” It was hard, and I followed the recipe to the T. For me, it sounded better than it tasted. A disappointment.
