1 lb. carrots, cut into 1 inch chunks
1 lb. sweet potatoes, peeled and cut into 1 inch chunks
3 Tbsp. nonfat chicken broth
1 Tbsp. butter
1 tsp. ground mace
salt and freshly ground black pepper to taste
Preheat oven to 450*F. Spray a shallow roasting pan with cooking spray; place carrots and sweet potatoes in the pan. Combine remaining ingredients and pour over vegetables; toss. Roast 25 minutes, turning twice, or until tender.
