Modified curry chicken recipe

Posted by: Fat Pants In: General

I finally bought some curry powder from Penzey’s and will attempt to make curry chicken tonight. I think I’ve finally found a good recipe that will suffice, although I have modified it a bit. Original recipe at epicurious.com.

2 tsp olive oil
1/2 onion, sliced or chopped
1/2 tsp garlic powder
1 tablespoon curry powder
1/2 tsp salt
1/4 teaspoon ground [...]

Pilates…what was I thinking??

Posted by: Fat Pants In: General

I had my first Pilates class last night at the gym. WOW. I don’t know what I was quite expecting, but I guess I wasn’t expecting it to be that hard! I have absolutely NO flexibility, and my hips, back, and thighs are burning this morning! It’s a great workout…I took my heart rate monitor [...]

Well I revamped my grocery list and came home with very heart healthy foods…

whole grain oatmeal with cranberries
soy nuts
whole grain bread with flax seed
fruits and veggies
lean meat
whole grain pasta
low sodium V8 (Mmmm!!!!)
lowfat cottage cheese
And for once, no ice cream!

Maybe this is the kick in the pants that I need (though you’d think my dad having [...]

ENOUGH ALREADY!

Posted by: Fat Pants In: General

My grandpa had a heart attack this morning and is undergoing triple-bypass surgery right now. I think I posted about a month ago or so that my dad also had a heart attack and had two stints placed in his arteries.
How much more will it take for me to realize that I NEED to do [...]

Maybe next time I’ll think before I cheat…

Posted by: Fat Pants In: General

On a thread I post in at 3FC, we are discussing motivation and how it’s really hard to stay motivated. I realized what gets me down a lot is 1) checking the scale and immediately wanting to give up if I see a gain, and 2) thinking about just how much weight I really have [...]

Why do I even do this?

Posted by: Fat Pants In: General

At the gym today, I started thinking about why I even bother dieting and exercising. I know I’ve said before it’s for health benefits, and a part of me really does care about that, but I wonder if part of what hinders my motivation is that nobody expects it out of me. I’ve always been [...]

Go me!

Posted by: Fat Pants In: General

Yesterday could have been a total waste, but I still managed to eat within my calorie range, not eat after 7 p.m., and go on a 1.5 hour hike with hubby and our big, fat, yellow lab. It was a good day after all!
Today I took my resting heart rate and my heart rate has [...]

It’s either the Yaz, or….
I really have not been hungry today. I didn’t even finish my oatmeal this morning (which isn’t that much to begin with). I did start to get hungry around 11:00 so I stopped at Pita Pit for lunch. They have surprisingly healthy stuff for lunch. I got a grilled chicken pita [...]

Fantasmic!

Posted by: Fat Pants In: General

I just had a fabulous lunch. Last night, I grilled veggies, potatoes and meat for dinner. Since I had some leftover zucchini, bell pepper and potatoes, I chunked them up and threw them in a skillet with a tablespoon of olive oil. I added some greek seasoning on top and let it stir fry for [...]

Serving Sizes

Posted by: Fat Pants In: General

I was trying to figure out just how much 2 ounces of angel hair pasta (I admit, I only measure by cups!), so I tried to Google it and ran across the PBS Kid’s page on serving sizes. It’s such a wake up call when I look at what the FDA recommends as a “serving [...]
