Lets share some healthy dinner ideas (I need to plan menus so I can get groceries LOL) I'll start it off with my favorite!

Mexican chicken casserole
1 lb frozen boneless skinless chicken breasts
1 - 24oz jar of Pace Mild Salsa (you could do hotter)
1 - can drained black beans
1 - can drained corn (I use 1 cup frozen)

put it all in a crockpot, turn it on low and cook for 6-8 hours, less if you put it on high. 30 minutes before serving stir in

8 oz fat free cream cheese

I serve this over rice, but you can put it in tortillas too! Very yummy! Its a WW recipe!

Who else has something yummy, healthy and hopefully easy to share!

Default Another RED Team mascot!

My big girl mascot is on my avatar. Let's see if I can attach a picture of my other baby. She has on a red cordoroy jacket (how convenient). She is about 15 years old and shivered a lot this winter so I got her a little jacket to keep her warm. She's my little old lady!

I've never figured out how to use photobucket.

Hi y'all....Havent had a chance to read anything yet. We're getting ready for a HUGE customer event at my company tomorrow, and it has been sheer pandolerium!! I haven't eaten off plan today....I just haven't eaten period. Not good, for this has set me up for binges in the past. I promise to eat a good OP dinner after my dance class tonight!

I'm going to try to post a picture of my doggie mascots -- I have two Australian Cattle Dogs - they're also called Heelers.
One is a Red and one is a Blue.

I have a picture of the red one chewing on the blue one! Let's see if I can figure out to make pictures work!

Ok, I'll admit to only having read a few posts since yesterday evening.

Today was weigh-in. Actually, Monday was supposed to be weigh-in, but I forgot Monday AND Tuesday. Just too many other things to think about! Anyway, I am down 2.5 pounds, woohoo! I didn't really eat dinner last night (I had "lunch" at 2:30pm and was busy from then on) so that might have skewed it lower, but it's also the first day of TOM so you'd think I'd be up a bit. I'll take whatever I can get!

And, most importantly, my husband said that my butt is looking more round and muscular. After that, who cares what the scale says?!?

Kelly, My Ozzy is a Blue heeler/Blue Tic mix. Best dog I've EVER had...and I've had a lot.

They are wonderful dogs, aren't they?

They are a big part of motivation as well - they are so high energy that they require me to get my hiney up and doing stuff all the time, it's great!

Your Ozzy is adorable, he reminds me a lot of one of my foster dogs that we had to put to sleep. My doggies are Ripley (the red one) and Indiana (the blue one) after Ellen Ripley from Alien and Indiana Jones. We wanted them to have strong hero/heroine names.

Whew! Enough about my pups - I have a pup button that I should know better than to push!

I'm wondering if you could do it with Laughing Cow Wedges instead? I always have those around and don't usually keep the cream cheese on hand...

My recipe - I'm going to use my favorite breakfast/anytime recipe because I adore these! They're not difficult or anything but for some reason to me, they always taste decadent and rich.

I call them "Eggy Sandwiches"

1 english muffin, toasted (I use double fiber oroweat muffins because they are 1pt)
1 wedge of LC cheese (your choice on flavors - 1 pt)
1 large egg, cooked overeasy if you like your egg runny (2pts)
Deli sliced ham, fried (I buy the really really thin kind and use 2 slices which is less than 20 calories depending on the type) (0pts)

On the toasted muffin, spread the LC cheese, top with the egg and ham. It is creamy, warm and delicious! ~4pts total for one sandwich
