i love ww's carrot and lentil soup, but i know i know i shouldnet be depending on processed foods(i knew watching all those diet progs would help sometime) so does anyone have a very easy low fat recipe for some carrot and lentil?

Says prep and cooking 1½ hours bit longer than opening a tin. My Mam has lentil soup daily she makes it at night then cooks it at dinner.

1 large onion, finely chopped
2 carrots, diced
1 leek, finely chopped
1 parsnip, diced
2 garlic cloves, crushed
1136ml/2 pints stock made with Bovril or Vecon
227g/8oz red lentils
1 x 397g/14oz can tomatoes with their juice
few sprigs of thyme and oregano
1 bay leaf
salt and freshly ground black pepper
2 tablespoons finely chopped parsley (optional)

Put the onion, carrots, leek, parsnip and garlic in a large, heavy saucepan with 284ml/½ pint of the stock. Cover the pan and bring to the boil. Continue boiling for 5-10 minutes, then uncover the pan, reduce the heat and simmer gently over a low heat for about 20 minutes, until the vegetables are tender and syrupy.

Stir in the lentils and cook over a low heat gently for 2 minutes, then add the remaining stock, the canned tomatoes and herbs. Simmer gently for about 45 minutes, until the soup thickens and the flavours amalgamate.

Season to taste, and remove the bay leaf and herb sprigs. If wished, cool thoroughly and freeze, then defrost and reheat at a later date. Serve hot, sprinkled with parsley.

veggie your a star.......... and is this low fat? and the ingredients that i dont like ie the parsnips(evil things) can i leave them out?

I guess you can leave them out and I suppose it's low fat. I nicked it from the sw website.

9 weeks to lose another???? lbs i started at 174 now 168 and i wanted to lose 14lbs so have 8lbs to go(sorry its early brain isnt working) ......its very do-able, or should be if i can just keep up the willpower......all very well for 9 weeks ...............its after that im worried about ah well one goal at a time

Just sneaked a peak at the scales and they are BAD BAD BAD!

AH well, maybe I should follow some sort of plan or something!

i started christmas shopping way back in august(i have 4 kids of my own)
8 weeks ......... 54 days now ............. wonder if i will make my goal! if i dont i can only blame myself

Ebeneezer and me don't do christmas so I don't have to buy owt will buy my grand-daughter lots tho' and take my kids out and spend a bundle of them when I go home
