You guys are so funny with your college football. I should probably be a Syracuse fan or something, but I just have never been able to sink my teeth into college football for some reason.

Did I tell you guys I'm going to a Sabres game on the 29th? It's a preseason game (the only way we could ever consider affording going to a game...tickets are so freakin expensive!!) We're seeing them play the Pittsburgh Penguins, who has Shelley's favorite player, Sidney Crosby, in Buffalo. We're SO excited!!

Today we get started!! Last night Derek said, "Wow, tomorrow's my first day being unemployed." and I said, "No, tomorrow you start working for ME!"

It is beautiful here in Texas this morning. A little front blew through a couple of days ago and really took the humidity out of the air. It was only 68 when we woke this morning. Fall doesn't seem quite as far away now.

Weekend eating went well. Hopefully I'll be able to carry that over into week two. Praying each of you has a SUPER Monday.

Happy Monday. is that possible?

Weekend was good. Eating was so-so.

Tonight at the gym I am meeting with a personal trainer. It is a freebie for the first time. I am sure they will want to continue, but no money now for that. I am looking forward to it.

Bob What a win for the CATS. Half of Louisville is in depression today.

Toni, I stocked up with veggies this weekend too.

Good evening. Just got done with dinner which was catfish, leftover cooked cabbage and a cauliflower salad I just tried. I'm trying some new recipes this week. Glad the week end is over. I did get a bunch of cleaning and wash done.

CAULIFLOWER SALAD
1 med. head cauliflower
1 lb. bacon, fried crispy
1/2 c. splenda
1 lg. pkg. finely grated Cheddar cheese
Miracle Whip Salad Dressing to cover
Salt and pepper to taste
Fry bacon crispy and drain well. Crumble bacon into bowl with raw cauliflower pieces, sugar and cheese. Coat lightly with salad dressing and salt and pepper to taste. Recipe works best if you refrigerate overnight before serving. Works great for those who don't care for raw cauliflower. It tastes completely different in this recipe.

I used plain mayo and a little less splenda. Yum its so good. Great to take to a pot luck. I also didn't use quite as much bacon which I like Plumrose lower sodim and fat.

Oh My Gawd do my legs hurt!

I worked out with the trainer last night and he showed me a bunch of lower body exercises and of course they push you harder than you do yourself. I can hardly walk today. Needless to say, I did not get up and walk this morning. I was worn out. It was a good work out though Sure wish I could afford to do it weekly.

Toni, I make the same salad with broccoli. Sometimes I mix in some cauliflower. Some people put raisens in it too. It is definately one of my favorties. But the may and sugar is fattening and when you use ff or light mayo and splenda it, isn't quite as good.

Where is everyone today???????????

Hello everyone! I am sorry I am late getting on here. I had a friend come for coffee and she arrived earlier than I was expecting her. She just left a few minutes ago. I am going to head down to the garagio in a bit and do some work. I wanted to get on here first though.

I had a great time in Asheville with the other moderators and the sisters. Suzanne is very quiet and observant. She is the type that when she speaks, you listen. Jennifer is mischievous. She is loads of fun. Amy is really sweet, and loving. They are so different in some ways, but so alike in others. Hard to explain. It was great to meet them though. The other mods there were Meg, who moderates the Maintainers, Sandi who does the 100 Club, Wylleen who does 300+ , and Jane who mods the Jaded Ladies. It was a great group, and we had so much fun together. Asheville is beautiful, a great place to walk around full of neat shops and unusual restaurants. There are lots of galleries and artsy stuff, so I really enjoyed it. I drove up there with a couple of the mods who flew into Atlanta from other areas. It was raining pretty heavily on the way up, but coming back on Sunday the weather was beautiful and the scenery was gorgeous. The leaves are just beginning to change. It was a great get together weekend, and I am looking forward to the next one.

I came back with a renewed determination to succeed. I am cutting out eating between meals as much as possible, and re-committing to staying on plan more carefully. Anyone care to join me?

Ok, I better go get going on the garagio stuff. I will check in later!

Howdy ho.... Had my toasted English muffin for breakfast and am about to fix lunch. Not sure what that will be but might be an omelet. And maybe some of that cauliflower salad. Can't wait to try it now that's its chilled. The Schwan's guy should be here pretty soon. I'm going to get more of that good marinated salmon.

Monet- I'm with you on recommitting. And making a stronger go of it. Its a great time of the year. Especially before all the holiday's and stuff start so I can really be strong then.

Solly- You know I have had that cauliflower salad before only with broccoli and loved it. Maybe it would be exactly like the one I had before but close enough for me. I'm hopeing some new recipes with help me get a little more incentive.

Better go make lunch.

Gee where is everyone today? I sure miss you all. Made my spinach pie tonight and it was pretty good. A tiny bit dry but I think I over baked it. It looked so pretty with tomatoes all around it. My fridge is getting nice and full of leftovers. LOL....

Spinach Pie

Blend together:

4 eggs
3 ounces softened cream cheese
1/2 tsp salt
few shakes onion powder and garlic powder
few grinds of fresh pepper

Add and mix well:

1 cup grated cheddar or other cheese (I used a cheddar blend)
10 ounces frozen spinach, thawed and well-drained
1/4 chopped green onion
2 T chopped fresh parsley

1 large beefsteak tomato (or a few smaller tomatoes)
4 T grated Parmesan cheese
2 T soft low carb bread crumbs
oil in a spritzer bottle

Pour into a greased flat round casserole (I used a fluted quiche dish) or even an unbaked pie shell (more work and more calories!).
Thinly the slice the tomato and arrange in concentric circles on top of the pie. Sprinkle with 2 T of the Parmesan cheese. Distribute the 2 T low carb crumbs on top of the cheese. Use remaining 2 T of Parmesan to sprinkle on top of crumbs. Spritz liberally with the oil. This will make a lovely, crispy topping on the pie.

Bake in a preheated 450 degree oven for 25-35 minutes, till top is golden brown and pie is set. 8 servings

Good morning! I slept a bit later than usual. I started taking Melatonin and it really helps my sleeping. I only wake up in the middle of the night once now.

My schedule today includes going to the shipping supply manufacturer to pick up some boxes to ship stuff in, getting more clay, and running by the bank. I need to squeeze in at least 30 minutes of exercise too. The pool is getting kind of cold though, so I may walk instead.

TONI: That pie sounds really good! I am going to copy the recipe and use it soon! Thanks for sharing!

Hi All,

If I skip a few days here, it's cause work is really off the charts lately and I usually post from there. I'm in front of a computer screen 99% of my day. (of course that doesn't help me at all being that sedentary).

Solly: Pain is good...very good when it comes to exercise that is. If I dont feel anything the next morning after a workout or if I dont sweat I wonder if I am giving it my best effort. I mostly do a home power walking video, so it is up to me to make sure I am really pumping it when I do all the routines. I have caught myself lately doing it in a very half arse way....lol. Gotta get out of that comfort zone.

Monet: Commitment time...I'm with you all the way...It's the home stretch before the holidays. Everyone at home has slacked off and I had allowed myself to do that too. Before I was exercising almost every day, these past 3 weeks, I'm lucky if I push myself twice a week. When I slack off on exercise, I slack of on diet too. It is funny how those 2 things work hand in hand like 2 pieces of a puzzle that just have to be together.

Good afternnon ladies,

Boy I'm sore all over today. Legs are worse. I did a upper body last night and gave it a good go. I think my DD is going to sign up with the trainers so I will just do what they do.

I have bunco tonight. It has been sine June that we have met. I am so looking forward to it.

Monet, sounds like a wonderful time in Asheville. Isn't the Biltmore there? I have always wanted to go there. I am with you on the recommittment. Time to get busy before the holidays.

Toni, I am copying the spinach pie and figuring out the ww points. Sounds sorta like a quiche.

Sararose, glad you are getting serious. I can't image being in front a a computer that long. I thought my time was bad enough.

Afternoon all. Had to run to town and get licences for the truck. Then mail my son in Iraq his monthly box. Tomorrow I'm going to run to Wal Mart and get the oil changed in the truck. So the dang truck will be done for awhile. LOL. I had a toasted ww english muffin with blackberry jelly for breakfast. And for lunch I had leftover spinach pie and cauliflower salad. Yum -=good. Guess I still have laundry to do. I forgot to weigh in this morning. I'm hopeing I can just make it though the week end. I'll be thinking of Monet's new start.

Solly- Yes the pie is like a quiche. Sounds like you're really working out. Oh how I envy you. I just can't seem to get started on walking on my treadmill again. Keep up the great work!

Monet-Guess you're as busy bee today. You'll be pooped tonight. Hope you make the pie. I'm having fun trying new recipes. DH griped cause I haven't made him anything. He forgot about the leftover lasagna sitting in the fridge for him. To bad he doesn't eat vegetables.

Not much going on down this way, I'm still getting gunk from the FLA FANS!!
I've tried to be really nice about this loss, actually complimenting them on their team etc.....it's getting kinda hard now and the way I see it, the dang game is over...THEY WON....GET OVER IT!!! MOVE ON!!

MONET...glad you had a good time...ASHEVILLE is such a beautiful place, and the surrounding area is great!

JACKIE..sorry you're sore...that's what you get for trying to be beautimous!!

Evening everyone. Tom and I just got in from a walk. The weather has cooled off, and it is time for me to go from the pool to walking again. I hate giving up the pool, but it sure is getting cold!

I got all my errands done. I am sporting a horrendous headache right now. Tomorrow I go to North Georgia, and I can't wait! We have some new equipment to try out, so that will be fun. I hope I am not as tired and achy as I have been today.

Off to finish up chores and get ready for bed!
