Great Job everyone!! Keep it up this week!

I thought to start out the week I would leave a pumpkin recipe here.
This makes a great breakfast!

1 15 oz. can pumpkin
8 oz cream cheese
5 Eggs
1/2 cup sweetener (you can also use liquid splenda to reduce carbs here)
1 T. Cinnamon
3/4 T. Pumpkin Pie Spice
1 t. Vanilla
1 t. Maple Extract (optional)

Whip everything together and pour into an 8x8 pan. Bake at 350 for about 30 mins or until the center is done. Cool and Chill, cut into 6 or 4 servings,
6 servings - 4 carbs each using liquid splenda
4 servings - 6 carbs each using liquid splenda

I look forward to trying the pumpkin recipe...will make it as soon as I find liquid splenda. None of my local stores carry it. My local stores barely carry any controlled carb product. Looks like I will be doing some online shopping! I still might not be able to get the liquid splenda sent through the mail.

I am afraid my little vacation didn't go well with weight loss ...... I have to admit, its not often that I find myself really challenged with trying to eat low carb but being at Disneyland for 3 days made it almost impossible. I was gone for 7 days total, ate well on the day I left and ok on the day I came back but inbetween was a mess. We couldn't take snacks into Disneyland and even if we could, I wasn't driving and had not way of finding a store to buy things at. We ate at the "continental breakfast" .... donuts, muffins, cereal .. so my choice each morning was a bowl of raisin bran and a coffee, the less of all evils present. Won't go into gory detail on lunches on the Disney property. Supper was often late and I did the best I could at the places we went, salads and such.

I loved my holiday ... but boy, what a struggle!!

Hi guys. Fell off plan for a bit. Thought I was ready to add whole grains and fruit. Turned into a sugar binge. FML. Back on track!

readyfreddy, I had to go back on induction for the same reason. My eating went all out of wack and I stopped losing. Best of luck!

Default One more day 'til weigh-in...

I don't know about this week, Challenge Buddies. I've eaten pumpkin for the first time this week...a lot of pumpkin. It is so good. I had no idea how yummy pumpkin was until I'd been on Atkins for almost three months.

I'm hoping it doesn't affect my weight loss. I haven't drunk all my water...AGAIN!...and I haven't walked every day. It's been homecoming week at school. Wild teenagers, lots of distraction, disruption...YIKES! School is just exhausting.

Anyhoo...let's hope for the best.

I've been eating okay, but I haven't been keeping a close eye on my carbs. I just eat when I'm hungry--veggies, meats, cheese, some Crystal Light if I want a sweet snack. Hopefully I lost this week.

On another note--Next week is going to be CRAZY! My boyfriend flies in on Monday...then we have a couple of days before we drive down to go to LA for BLIZZCON! (World of Warcraft/Starcraft/Diablo convention) I have a feeling I'm not going to be eating my best, because most Atkins-friendly snacks spoil easily and I hate pork rinds so I might have to take some granola bars etc so I don't starve at the convention. I'm also going to have to be eating at restaurants nonstop but I'll try to get the most on-plan choice as possible. If anything I can just order a cheeseburger and take the bun off. If anyone has an ideas for snacks that won't spoil while being warm for 6+ hours I'm all ears.

All right ladies.....One more day until weigh in. I have been so good and not weighed myself at all. (it is driving me CRAZY!!) I have stayed on plan, drank tons of water (which is unheard of for me), and started exercising. So I am hoping for a big loss. Okay it doesn't have to be big. Just a loss would be great.
Next week will be challenging. My friend is coming to visit for a couple of days. Another friend wants to do dinner and a movie. I will do my best and make sure to hit the gym.
