I'm done induction in a week and two days, I'm going to have to make this bad boy! I loveeee pumpkin pie but can't really have it anymore because of the sugar and crust. I know this isn't really a "phase 2" recipe but I could make it fit
Oh that's great! I'm glad it helped you. You could probably even adapt that almond/pecan crust for other pie recipes since you can't eat gluten or wheat. I'm going to make it on Thanksgiving so I can have dessert and not feel like I'm missing out on cheesecake, which is one of my favorites.

Default Congratulations, all you losers!

Yay, so many of us lost weight; we're doing great. Lts Girl, it's good to hear from you. You'll chase that stupid TOM right out of town this week.

Angebella, many of us are basically on Induction for a while...either because we want to make our challenge weight or we have lots of weight to lose...or both. I stay on Induction, for the most part. I wander off track to have Hungry Girl Cheesecake about every other week - the ricotta cheese isn't for induction. I have to stay pretty much on Induction, and I walk for a little while every day to lose, but it's worth it to me.

I'm finally able to wear some of the clothes I'd "fatted" out of...and I love my clothes. It's very exciting to put them on and find they either fit or are beginning to fit. I have a way to go, but I'm not letting anything get in my way.

Good luck this week!

Hi everyone!

Checking in - it's day 2 of induction for me and so far I'm doing great. I already feel better. Had some moments of the induction flu yesterday but nothing serious, thank goodness. Maybe I'll completely skip it this time around.

I love pumpkin cheesecake!

I make flax muffins w/ cinnamon, and recently I found a recipe for a pumpkin cream cheese spread... delicious and induction friendly!

Pumpkin Cream Cheese
1/2 cup canned pumpkin
8 oz softened cream cheese
1 tsp vanilla
1 tsp maple extract
1 tsp cinnamon
1 tsp pumpkin pie spice
2 T. Ideal Sweetener - Brown
2 T. Ideal Sweetener - Regular

Whip everything together until smooth - and you instantly have the best spread ever! It's like a little dessert for breakfast.

Oh, and I recently discovered this Ideal sweetener. It beats the heck out of Splenda.

Hope everyone is having a great Monday!
I can't wait to weigh in on Saturday!

So I convinced my fiance we should go grocery shopping tomorrow, he's kinda into the idea of the cheesecake as well. I think what sold him on it is I said we could make one for us, try it, and if good make a second one to bring to thanksgiving dinner because it's a dessert my diabetic mom can have. Her and I never get desert because it usually has wheat or sugar in it so this will be fun!

I was wondering, do you guys mind if I weigh in on this thread daily? I feel more comfortable with that. Or I could try to do it once every other day

Hi, I am new here. I have "tried" Atkins many times, but lost motivation after aabout 2 weeks. Can I join in? MY name is Mary Ann, and I have about 40 lbs. to lose. I tend to eat the same meals over and over, and get bored with it. I'm really looking for support and motivation.

Hi Mary Ann! You will find lots of support here and tons of delicious recipes. Be sure to check out http://www.genaw.com (recipes with stars next to them are safe for induction) and the "Recipes from What's For Dinner?" thread. Sandyfanny put notes about the ingredients that aren't safe for induction. Hopefully it will help you add some variety to your meals so you don't get bored.

I believe anyone is welcome to join the challenge. Weigh-in day is Saturday but you can set your own weigh-in day if you'd like.

Thanks for the welcome. Normally I jump right in full steam and half prepared. I am on night shift this week. I already have my meals packed for tonight, so I'll wait until tomorrow night to begin. My biggest problem is when I start to see success, I quit. I have no idea why I do that. I am at my highest weight ever (181). I seem to drop to 177/178 and right back up to 181 again. Maybe it will help if i post my meals when I begin "again".

So, I went on to OWL as I was losing weight to quickly on Induction and I want to easy into my goal so I can maintain it and do my CLL properlly as well as my ACE. I had a whiskey and diet coke last night hoping that would slow it down but I just lost a lot of weight again. Today is my eight day on Atkins so I'll make this my weekly weigh in date (Every Wednesday)

As of today:
SW 159.4
CW 152.0
GW 140

Only 12 lbs to goal, eek. I can't believe it's happening so fast.
