Mediterranean Vegetables with Chickpeas

recipe ingredients
1 onion, sliced
2 leeks, sliced
2 cloves garlic, minced
1 red bell pepper, sliced thin
1 green bell pepper, sliced thin
1 yellow bell pepper, sliced thin
12 oz. zucchini, sliced
3 cups mushrooms, sliced
14 oz can chopped tomatoes
2 Tbsp. red wine
2 Tbsp. tomato paste
1 Tbsp. ketchup
14 oz can chickpeas, rinsed and drained
1 cup pitted black olives
3 Tbsp. chopped fresh mixed herbs of choice
salt and fresh ground black pepper to taste

recipe directions
Put first 13 ingredients (onion through ketchup) in a large saucepan. Stir well and cover. Bring to a boil, then reduce heat and simmer for 20 to 30 minutes or until tender but not overcooked. Stir occasionally. Remove lid and increase heat slightly for the last 10 minutes of cooking time to thicken the sauce. Stir in the olives, herbs, salt and pepper.
