Easy Garden Bake

recipe ingredients
1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1 cup)
1/3 cup grated Parmesan cheese
1/2 cup Bisquick® Reduced fat baking mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg substitute
1/2 teaspoon salt
1/8 teaspoon pepper

recipe directions
Heat oven to 400°. Grease 9-inch pie plate and set aside. Saute zucchini and onions in a nonstick skillet which has been sprayed with nonstick cooking spray; saute about 3-5 minutes or until slightly softened. Combine with tomatoes and cheese and spread over bottom of pie plate. Stir remaining ingredients until blended. Pour into pie plate over vegetables. . Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

    This recipe was very simple to make and my husband loved it- however, I was a little put off by the egg texture. Next time I might try leaving it in for a little longer than the 35 minutes, and I might try using a little less parmesan cheese.

    We just loved this. My fiance raved about it. It was, however, pretty bland. I added seasoning salt and we served it with salsa. Also, I made a mistake and chopped some green pepper instead of onions, and we think we like it better that way. More colorful. OH, and the 4 servings? they are HUGE! hurrah! only 3 points!

    This is a great recipe-I added some Italian seasoning to the zucchini and onion while sauting and then I added fresh basil leaves before pouring the “crust” over. It was very light and delicious.

    I changed this recipe and would make some more changes next time. I used chopped cauliflower instead of zucchini (as my son doesnt like zucchini) and I added salt and pepper to the vegetable mixture as well as the Bisquick mixture. I found it was too wet even after leaving it in the oven for 50 mins. Next time, I would add less milk. However, it was very tasty and we all enjoyed it very much. I will definitely make it again!

    This was really delicious. It was light and fluffy, it would be better with a small amount of turkey bacon.

    Like Stevie mentioned above, I was also a little put off by the egg texture. Somehow I expected it to be more biscuit like and less quiche like. it was just ok for me.
