1 chayote squash
1/4 cup tomatoes, chopped fine
1/4 cup red onion, chopped fine
2 tsp. dill, chopped
3/4 tsp. salt
freshly ground black pepper to taste
Simmer chayote in a pot of water until tender, 35 to 45 minutes. Peel, seed and cut into 1/4 inch dice. Combine chayote with remaining ingredients. Serve with grilled fish or other seafood.
