Hi ladies.. busy day today. Had a ladies morning out, supposed to be breakfast and coffee, but I ate before I left the house and brought my water bottle. Still enjoyed the company though. Then off to school to volunteer with hot lunch, home to prepare dinner and afterwards bring my daughter to her piano lesson. Wednesdays! Gotta love em, not only for its "hump day" appeal! LOL
My Day:
Breakfast - Greek Yogurt with flaxseed and blueberries (300 cals)
Lunch - Egg Salad crisp (400 cals)
Snack - Let's Go Nuts n' Honey (200 cals)
Dinner - Turkey Chili w/veg (400 cals)

The Perfect Sandwich Bread (taken from Holy Cow! Vegan Recipes)
(Makes two loaves)
Mix in a large bowl and set aside for five minutes until it begins to froth:
4 tsp active dry yeast
1/4 cup warm water
Mix in another bowl:
1 cup warm soymilk
1 cup warm water
2 tbsp shortening like Crisco's transfat-free shortening (I don't like Crisco, so I used Earth Balance)
2 tbsp sugar
1 tbsp salt
Add the soymilk mixture to the yeast. Add to it:
1 cup bread flour
1 cup whole-wheat flour
Mix in a stand mixer on low speed or by hand. Then add:
1/2 cup whole wheat flour
Knead on low speed or by hand, gradually adding until the dough is no longer sticky:
1 to 1 1/2 cups of bread flour (add more flour if the dough's still sticky - I had to add more).
Continue kneading for another 10 minutes.
Transfer the dough to an oiled bowl, turning once so the top of the dough is coated with oil.
Cover with a kitchen towel and allow it to rise in a warm place for 1 to 1 1/2 hours, until doubled in volume.
Now punch down the dough, and put it back in the bowl to rise for another hour.
Grease two standard (6-cup) loaf pans. Now punch the dough down again and divide it into half. Shape each half into an oval, tucking the seams underneath.
Place each oval into a loaf pan, cover loosely with oiled plastic wrap, and set it aside to rise for about 1 hour until the dough rises above the pan, forming a nice dome.
Preheat the oven to 450 degrees. Bake the loaves for 10 minutes, then turn the oven temperature down to 350 degrees and continue baking for another 30 minutes or until the bottom sounds hollow when tapped.
Cool on a rack for about 10 minutes, then remove the loaves from the pan and continue cooling.
Despite the business trip and TOM arriving last night I was down 1.6 pounds for the week. Not as much as the 7 pound loss from last week but I'm almost 9 down for the month and almost halfway to my goal to lose 20 by my 30th bday February 25th.
I'm up to 1.5 miles and about 16 minutes on the elliptical 3 days per week and I'm planning just to keep adding 5 minutes every week until I hit 30 minutes and 3 miles.

I'm back with oatmeal this morning....it helps me not be so hungry all day long. I've been in that beginning "honeymoon phase" of my weight loss....where it falls off really quick because of water. I think it's officially slowing down. Good and bad, I guess. I don't want it to come off too quickly, that's for sure! Sure is motivating seeing those results, though! I'm gonna be ecstatic with a 1 1/2-2 lb per week loss, though!! Hope it happens!! (I'm doubting it will every week, though that's my goal!)
Diana, you're smokin' it!! Just your beginning weight and your current weight are SUCH an inspiration to me!! I do hope you're planning to stay here even in maintenance!
And Vixsin, your motivation and attitude are an inspiration to me as well!

Eury - My cals have also been on the lower side this week. After vacation I am having trouble getting back to my regular eating plan. I love you idea of "balance". Your so right, it's not just about losing weight but learning to live a different balanced life. Congrats on that non-stop 1 mile run! Great job

Since getting back from vacation my eating has been totally off. I haven't been eating bad I just haven't really been eating. I have no appetite. Yesterday I skipped all my snacks and didn't eat dinner!!!!! I know, I know. So bad right. I really could use some gentle butt-kicking right now.
I'm hoping that after settling back in to my regular daily routine and having a regular weekend will help me get back on track for next week. For now all I can do is plan and try to stick to it as best I can.
So here is the plan for the day Thurs 1/13/2011
B - 1/2 cup oatmeal w/ natural peanut butter, spoonful of sugar and chopped banana
S - V8 Vegetable Juice + 1oz dry-roasted almonds
L - Homemade Vegan Shepherds Pie + 1 cup mixed veggies
S - 1 small apple
D - Seitan (wheat gluten, kinda like fake chicken) stuffed w/ corn, beans, jalapenos and some other spices + 1/2 baked sweet potato + lightly steamed broccoli and kale w/ a black bean sauce
Drinking: At least 2 cups green tea + At least 2L water
GOOD: I ran for the first time in a month and a half and my foot is all better! It felt so good to get out there. I also did my pushups and walked a lot. Lunch was fairly healthy; bran flakes with soy milk and some veggies with peanut sauce. I was also really productive at work and got all my grading done.
BAD: I ate too much! Definitely over 2000, most of which came from carbs. My friend threw me a surprise belated (by almost a month) birthday party and made me a creampuff mountain cake, and another friend brought a tin of literally hundreds of Swedish ginger snaps. It was disastrous but so lovely at the same time.
Diana(LA) & Lauren Thanks ladies. This girl isn't going anywhere, unless, you kick me out of this club or yours! As far as I know, maintenance is all about doing the same thing I've been doing. I will still need a place to hang out to post my goals and frustrations.
