I attempted to make a meatloaf in the crock pot the other day. I added a ton of chopped veggies and more asian type spices-ginger, garlic, rice wine, 5 spices. Turned out tasting pretty good but it fell apart when I attempted to remove it from the crockpot and I noticed the center was still pink so I opened a can of minced garlic tomatoes and threw it in on top and made it more like chili. So think asian meatloaf chili. Hmmmm...it really tasted much better then it sounds.
I had lunch in town today so tonight will be a big mess of spinach with toasted pine nuts, a shredded zucchini and Eggbeaters omelet with mushrooms and a bit of real cheese plus a crispy and tart Courtland apple! The first real apples of fall are finally here. I get so tired of Granny Smith and Delicious! I do live in apple country after all. The Macintosh came from right around here.
Since I have a lot of chopped onions and celery leftover from making a pasta salad for tomorrow, I'm going to make Pasta Fagioli for supper today. Around here it's fondly known as "Pasta Fazul".
I just had a very yummy curry roasted veg fritatta for lunch. Dinner is roasted pork and ...veggies. I've got tons because I just got back from the farmer's market.
Cottage - are you sure we weren't neighbors?! I was so surprised when I saw that "g" because it sure didn't sound that way when my Gram said it
We are still eating warm comfort foods. Tonight I'm trying a chickpea soup with tomatoes and basil with butternut squash fries on the side. There will be plenty of leftovers for the week
I'm not sure yet. I'll be home alone so it will be something simple. Maybe a quick shrimp or tofu stir-fry. Or maybe I'll hang out with friends. Maybe even a date with a friend who's been bugging me to go out with him. Who knows? I'll keep you posted.
Last night I stopped by my favorite Thai place. I had the leftovers for dinner tonight. I sure can't eat like I used to. But that's good because I can stretch a meal out for days with leftovers.
