My new favorite salad - spiral cut squash, tomatoes, lots of basil & garlic and cannelini beans with a light balsamic vinaigrette dressing, burger on the side
It's just my daughter and I tonight. Neither of us were very hungry. I ended up having Kashi Go Lean with soy milk. I also had a few strawberries. So, we will have the marinated flank steak dinner tomorrow night. Now the steak can get a good marinade bath overnight.

While the rest of the family had ribs, I had a Morningstar Farms Riblet, grilled butternut squash fries, 1 ear of corn, and an edamame, avocado, tomato and fresh mozzarella salad.
I'm about to have dessert, sliced peach topped with a scoop of FF frozen Cool Whip and a sprinkle of Ezekiel cereal.
I tried a recipe I'd found on line: sauteed a half-onion and 2 garlic cloves with about a dozen baby zucchini (infants, really), and four ounces of assorted mushrooms, with a half-can of white beans. A little bland, but not bad. At least at this stage, the only way I'm going to get enough vegetables is to eat them b themselves. One serving of this was two cups (with one serving for tomorrow), and I could not have eaten 3 oz protein with it!
(The sirloin I had last night was awful. Tough, tough, tough -- and it was not inexpensive. Lots of gristle. Yech.)
Good thing I saved the marinated flank steak dinner for tonight. I had a bunch of teenagers today and they all had great appetites. Also, my oldest came home and munched before he headed back out the door.
Last night I made a tuna tabbouleh. It was just perfect for such a hot day. Today I am trying to decide between chicken something in the crockpot (I plug it in the summer kitchen so it doesn't heat up the house), or have DH grill some sausages.
I'm not quite sure just yet. I may go out to dinner for my BDAY or I may make Chicken en Papillote from the South Beach book, salad and a vegetable of some sort and celebrate with a nice bottle of wine.
