I must be on a different planet because its hot and I have been eating a lot of chili, and I just made another batch tonight... I ate the last of the first batch tonight for dinner cold. it was sooo good! I am hoping this batch turns out as good because I never measure anything! Chili is a staple for me in the fall and winter I guess I just started a lil early this year! Thats what happens when you get 70 degree highs in the middle of August! My tummy is confused!
It was very cool here yesterday so we had pink beans & veggie chorizo from the crockpot served over spiral zucchini so we could eat homemade bread on the side Usually it's on rice but the bread was too tempting.
Since I've been partying lately and have a big luncheon at noon today, dinner will be a bowl of lentil soup that I made yesterday. It's yummy and loaded with veggies including spinach.

Ruth do you add carrots to your lentil soup? I love lentil soup and have been hunting for a good recipe for P1 but they all seemt o have carrots in them?
Went to Macaroni Grill last night and had the most heavenly "Simple Salmon". It had grape tomatoes and basil on top, with a side of steamed broccoli and roasted asparagus. Also had a garden salad with it. I was worried about eating there, but there were actually a few very nice SB compatible entrees. Tonight we're having sirloin marinated in the Flank Steak recipe from here, steamed cauliflower and baked sweet potatoes.
Artemis - carrots definitely aren't required for lentil soup. Just find a recipe with seasoning you like and leave them out. I like spinach in my lentils. The other night I added kale, zucchini, & broccoli stems to curried lentils as an anecdote to vacation eating

I've had no interesting dinners -- mostly steak, and a mix of zucchini, onions, mushrooms and green beans (not all together.) I made a SB (from their site) pork chop recipe one night that was very good, the first night. And the second night. But by the third night, it was so dry I knew I wouldn't be able to face the fourth chop. Cooking for one can be a challenge.
Today i had an amazing idea of a "Broccolli and leanmeat mini burgers" , i blended all (meat , garlic , onion , loads of broccolli , 1 egg white) than made small burgers .. was delicious and very light! with a big green salad and cauliflower puree
Since Im still on holidays in Brazil, i have to enjoy all the veggies and salads that u can buy here for very cheap price

Xan, another idea that you may want to consider is to make up your recipe, then divide it into portions and freeze them. It really comes in handy on nights you are just too tired to cook or don't have time.
