Taco Bake 3 nights in a row. (Leftovers) Did I mention I love the Taco Bake? My new favorite is with pinto beans.

I had a chopped salad made of zucchini, tomatoes, bell pepper, onion, avocado and chickpeas, tossed with Ken's Light Northern Italian dressing. Sinfully delicious!

Tonight, Sunshine's Sensational South Beach Kitchen is serving Salsa Chicken, a tossed salad and Surprise South Beach Mashed "Potatoes". Dessert will be optional but something within plan.

Tonight will finally be a pork tenderloin skewers with grilled eggplant and other veggies. I am making a small potato salad from some very tiny taters as a treat. (Little waxy new potatoes are OK once in a while, right?)

Cyndi, I can hardly wait for my fall crop of chard to be ready so I can make your recipe.

Tonight's supper is going to be spaghetti squash with Arrabiata sauce and meatless meatballs, with a cucumber & tomato salad.

Cottage, I love the sound of your salads. I am salad challenged. I love them when somebody else makes them, but mine are always either too soggy or too dry. Conquering Salads is on my To Do list

My dinner was not good -- leftover meatballs, heated from the freezer. It wasn't bad, but it was tired. I'm going to put up a thread about cooking for one Leftovers are what have often killed a diet for me. I get bored and TV dinners are so much easier. (NOT this time. NOT this time )

The frittata was really good. I've decided that a small amount of good feta is much better than a larger amount of reduced fat feta. Fresh dill also helps

Cottage - I made tomato and cucumber salad tonight too. Wouldn't have thought of it if you didn't keep mentioning it.

Xan - I've really branched out with the salads this year. I like using leftover grilled veggies, beans, and fake meat with some Newman's rf dressing. Makes a good, filling meal salad.

Last night was a lemon pepper chicken breast I'd bought prepared from Whole Foods and it was DELICIOUS! (I baked asparagus with it.)

Tonight will be a grilled sirloin steak, with sauteed mushrooms and spinach.

It's not very summery but the boys wanted lasagne. I used whole wheat noodles (don't have to be boiled first), part skim ricotta, 98% lean ground beef, 2% mozzarella, spaghetti sauce and added zucchini to my section. They loved it and it was totally beachy. The garlic bread wasn't but that's another story. And with feeding 4 kids I don't have too much left over.
