Seared tuna steaks and an orzo salad made out of wg orzo, grape tomatoes,celery, mushrooms, roasted pumpkin seeds, lots of fresh herbs ( 2 kinds of basil, terragon, sage, parsley, chives and celery) out of the garden with an olive oil/ lemon/garlic dressing on a bed of spinach. Put it together early this morning and let it "marry" all day. Husband VERY happy.
Cyndi, that dish looks as pretty as I'll bet it tasted!! Fresh and yummy!

I'm going to try that avocado gazpacho recipe that Cyndi posted for supper today, and have it with leftover baked beans and 3 Bean Salad. I think I'd better take some Beano with my supper!
I just made chicken and broccoli twist from the phase 1 entrees section - it's made with velveeta - so cheesy and delicious! A great idea if you're missing something like mac and cheese.
Kleo, good idea. I missed that recipe. I'm having curry lentil soup for 1 and my usual happy salad. I have some fresh guacamole which I'll mix with a little ranch for my salad dressing.
Cyndi, it was excellent! This was a bulk soup from Whole Foods Market...add boiling water and wait 5 minutes. Is this ok for an occasional meal? I did buy some red lentils for Jandas http://www.3fatchicks.com/forum/side...ml#post2854300. I just need to get home to my tomatoes.
Debbie - as long as you checked the ingredients it's fine. Your Whole Foods sounds huge! I don't think the one we go to has that or the bulk agave. Actually they have a pretty small bulk section. In our co-op I can just get some of the standard Fantastic Foods stuff in bulk. It's nice to have a choice for quick healthy stuff sometimes
The plan is roasted cauliflower, zucchini and peppers with pork schnitzel. That could change to burgers, grilled veggies and salad if I have company and they want to grill.
Last night was a salmon fillet (bought prepared, with a lemon/basil marinade) and vegetables (broccoli, asparagus, onions, mushrooms, green and red peppers, also bought precut!) baked in a packet of aluminum foil -- took about 10 minutes to put together and was delicious!
Tonight will be the meatball casserole from this forum! With baby zukes and mushrooms sauteed in olive oil.
I made a stir-fry curry with the leftover crudites, and threw in some chickpeas. It was hot, though, so I had to spoon some FF yogurt on it to tone it down a little.
