Last night's dinner was so good and easy that I made a variation of it again tonight. Grilled portobellos, zucchini, butternut squash and tomatoes, topped with shaved parmesan cheese. MMMMMMMMMM!

I did it! I finally made bean burgers that weren't full of bread crumbs but held together. We had those with stir fried bok choy with soy sauce & sesame oil.

Tonight is ham, asparagus, pasta which has a "cream" sauce made from nonfat evaporated milk. Original recipe calls for zucchini but Brian prefers asparagas so I use that.

I sauteed fresh peppers from our garden with onions and Tofurkey Italian sausage. Jake had his on Italian rolls, but I just piled mine on a plate. Scrumptious!
