Well, I have to have the guy push me off - my legs turn to rubber and I can't jump myself. After I am airborne, though, it's all good!

This recipe is one of my ALL-TIME FAVORITES!!! Makes great sandwiches, too.
BROILED EGGPLANT
1/2 cup finely chopped plum tomato (I use a whole canful)
3 tablespoons balsamic vinegar
2 tablespoons chopped fresh basil
1 small garlic clove, crushed
1 small eggplant (about 12 ounces), cut into 1/2" slices
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preheat broiler. Spray broiler rack with nonstick cooking spray. In small bowl, whisk together tomato, vinegar, basil and garlic. Arrange eggplant slices on prepared rack; brush slices with some of the tomato mixture. Broil 5-6" from heat 8 minutes, until lightly browned. Turn slices; brush with more of the tomato mixture. Broil 3-5 minutes, until
lightly browned. Transfer slices to serving bowl; keep warm. Add salt and pepper to remaining tomato mixture; stir to combine. To serve, pour remaining tomato
mixture over eggplant slices.
EACH SERVING PROVIDES: 1 1/4 Vegetables
PER SERVING: 33 Calories, 1 g Protein, 0 g Fat, 7 g Carbohydrate, 143 mg Sodium, 0 mg Cholesterol, 2 g Dietary Fiber
VARIATION:
Eggplant slices can be prepared on a grill. Spray grill with nonstick cooking spray. Place
grill rack 5-6" from coals. Prepare grill according to manufacturer's directions.
Follow steps 2-4 above.
