Made some tempeh "chicken" salad. So had:
-1 serving of tempeh chicken salad
-1 c shredded lettuce
-1/2 avocado
-hot sauce
-2 slices of udi's gf sandwich bread toasted
It was very good, but I was so hungry from not eating breakfast :/ I was a -4 and ended +2.
mars-I finally got some Walden Farms chocolate dip really good and the perfect way to help with sweet cravings! It tastes like pudding haha I think next time I might try one of their dressings.
2 gf waffles with a little butter and honey, 1/2 c blueberries. I was a -3 and ended +2.

Heyyy Dott, I'm so glad you liked that chocolate pudding! I also like the WF apple butter, surprisingly. I could have eaten the whole jar. I bought it to make a mock apple pie using zucchini as granny apple slices, tossed with the Apple butter, maybe cinnamon. The recipe used a crunchy Ideal Protein cereal, which could be substituted with something else, maybe nuts or an alternative protein crunchy cereal from Nashua Nutrition, etc.
Lunch yesterday was -3/+3 on the run.
Salad with chicken breast, Braggs yeast, veggies, evoo, WF dresing. Laying off the nuts for a while as I got into a middle of the night snackfest with the walnuts.
Dottington, It was a video demo from Ideal Protein. Unfortunately I can no longer access it. There was a Chef Verati who created great low carb low fat recipes & provided all sorts of cooking tips. He was funny too. Anyway, I jotted some notes, hope you can make sense out of them. It's really simple once you see the idea.
2 C sliced zucchini
2TBS WF apple butter
Apple Soy Puffs crushed***Ideal protein item so need a substitute that is crunchy
Salt for Zucchini to release water while heating in skillet
I think you peel the zucchini and then slice into thin pieces as if making apple pie
Heat the zucchini in a skillet with some salt to draw out the water so that it stays crisp and doesn't get limp, yet is softened a little
Add apple butter
Add cinnamon
Put in pie pan
Top with crushed soy puffs
broil 45 sec
Chef Verati has a facebook page if you google his name. But I don't see any recipes. He goes around the country giving low carb low fat cooking demos.
Mars + Dottington: Don't mean to jump in on your conversation, but I use this recipe for the zucchini. Sooo good! I think it's the lemon juice...it makes sort of a "syrup."
