Dinner tonight is ground-turkey-tacos for DH, with fajita style veggies on the side.. I'll make mine only veggies and eat them as fajitas in corn tortillas. I went to Aldi and got lots of yellow and red peppers yesterday, so we will have purty fajitas, lol.

With our usual spinach salad, and maybe this: http://www.food.com/recipe/calabacitas-196430 on the side.. of course, with no cheese, lol, and no evoo, only Pam! (my best cooking friend, lol..)

I just have to say that my swordfish steak last night was SUPER DELICIOUS!

Tonight, I'm only cooking for my son and I so I have to get creative with the veggies.

My chickpeas came out soft in the middle so I will have to work on refining that recipe! lol

I just HAVE to share this recipe with you guys. I am from Ann Arbor and they have this amazing vegetarian restaurant called Seva. They have the BEST enchiladas calabaza I have ever had. It is what I always get when I am there. Sooo yummy. I was testing myfitnesspal and searched for the restaurant and found they had one meal in there... my meal! YAY So I am going to make these soon.

My nugget and I went to Rainforest Cafe last night and I got the blackened tilapia fish tacos. I ate one and the other is in my fridge. I may have that and just use a new corn tortilla since I keep them in my freezer and I'm sure that one is soggy.

Or I'll pull out some butternut squash chili from my freezer. It's snowy here.

I ended up getting out early yesterday, so I made polenta with sun dried tomatoes and fresh homegrown basil and topped it with sauteed mushrooms and a turkey sausage tomato sauce that I made and had frozen.

Tonight I have to eat that fish taco before it goes bad

Tonight were going out for sushi... I'm saving my calories for it, all 1000 of them, LOL. (I'm eating 1350 as of now, for a few weeks, to get things moving again.)

I love sushi... yey.

Tomorrow were going to a Brazilian steakhouse up in Cleveland. It's like, giant-meat-fest, but I'm good. I'll be getting the salad bar and maybe a sushi roll.

Keep going everyone! Don't let the weekend throw you off!!

I LOVE Brazilian steakhouses. My birthday is next month and that's my birthday gift

Kay, I love seeing new websites for recipes. I bookmarked the recipe and the site where you got your enchilada recipe.

Munchy, how did your polenta turn out?

Your dinner sounds awesome! I love filet mignon - it's the only steak I'll eat, and I have a great local place to buy it inexpensively. They also have the best seafood and prices around, so I usually end up with shrimp, scallops, and sometimes mussels or lobster too

The polenta was really good. It's all solidified now, so I can pan sear it and top it with different veggies and sauces. That's my favorite way to eat it.

I made butternut squash enchiladas a while back and they fell flat for me - maybe because they were sweet, but not spicy enough. I would have to revisit with Kay's recipe. So far, these zucchini enchiladas are the best vegetarian ones I've ever made. I felt so good about these that I even made a carbalicious black bean/rice side

We're having leftovers. Ground chicken breast meatloaf which sounds dreadful but is AMAZING-it's a healthified Giada recipe. Cauliflower mash. Lots of salad w/ff dressing for me and steamed broccoli for Robert.
