That sounds delish, Owl!! I love me some black beans. I made a butternut squash and black bean enchilada recipe last week and OMGoodness was is AH-mazing.

Like this, but I made it more of a bake with layers so I could use more 'filling' and less tortillas!

Were having homemade veggie soup my dad made for us, and maybe a big salad.. My dad makes excellent vegetable soup.

I think I'm going to make some lightened up creamed spinach and slice medallions off a beef tenderloin. Couple that with some sauteed onions and mushrooms on the side.
