I had hashbrown soup for lunch. It was yummy. I also had a glass of diet Coke. On the way back to my office I had 2 Lifesaver wintergreen mints.

Good morning. It's Thursday...so that means one more day to get up early til the weekend! Yay! I'm so darn cold this morning. I have my coat on AND my fleece blanket. When you walk into my cube, you can seriously feel a breeze! Not good. I need to find 2 point friendly recipes to make for dinner this weekend. One for Friday, the other for Sunday. Any ideas?

Hope everyone had a great night! I'm starving...but I am making myself wait til 9:00 AM to eat my breakfast.

Morning Chickies! :p :p :p WOW....can't believe I'm back in at work already....but like VIVA says, only one more day til the WEEKEND! YAY!


I don't feel like doing jack chit today....but I have to get some stuff doen before the staff meeting I have to go to. Such a waste of time for me since they RARELY have anythign to do w/me and I basically just sit there and doodle on my notepad! :lol:

Anyway, guess I better get a move on and at least get the paperwork done for these blasted refrigerators!

I was just sitting here eating my hot oatmeal for breakfast, and realized I hadn't come in here yet! Oops!!

VIVA - I'll try to find some recipes for you...I'm getting back into cooking real meals, so I've been experimenting a little bit lately.

ROCKER - I'm stunned you didn't mention anything about your DH, since he's been in the news...you're slacking!

BTW...I had a 4-pound loss this week.

TWIDDLE: yeah I know...been really out of it lately. I watched him last night on MSNBC with Rita Crosby...went and got a paper this morning but no pix--just an article. Saw him on the local news as well. To be honest I didn't even know he and the band were in town til I heard Pierre from MMR mention it yesterday!....and to think they were in my neck of the woods in the Northeast! Oh well. :carrot: :carrot: CONGRATS ON LOSING THE 4 POUNDS..WOOHOO! :carrot: :carrot:

Recipes to try:

Chicken Italiano
Servings: 4 Points: 6

5 ounces angel hair pasta
1/2 lb. boneless chicken breasts, cut into thin strips
1/2 cup light Italian dressing
11 ounces frozen mixed vegetables
3-1/2 Tbs. grated Parmesan cheese, (optional)

Cook pasta in a large pan of boiling water 4-5 minutes until al dente. Drain. Set aside and keep warm. Combine chicken and 1/4 of the dressing in a heavy nonstick skillet over medium high heat. Sauté chicken 2 minutes, until lightly browned. Add vegetables and remaining dressing. Cover and simmer 7-9 minutes until vegetables are crisp tender, stirring frequently. Serve over pasta. Sprinkle with cheese (add points for cheese).


Spinach Lasagna
Servings: 6 Points: 6

1 TBS olive oil ¼ cup finely chopped onion
3 TBS flour 4 cups 1% milk
15 oz, low fat ricotta cheese 10 oz frozen chopped spinach, thawed and squeezed
1 egg white ¼ tsp ground nutmeg
9 no boil lasagna noodles

Preheat oven to 400 degrees. Heat the oil in a nonstick saucepan over medium high heat. Add the onion and cook until translucent, about 3 minutes. Add flour and stir until well mixed. Whisk in the milk and bring to a boil. Boil until the sauce thickens and remove from heat. Meanwhile, combine the ricotta, spinach, egg white and nutmeg. Spoon one cup of the sauce into bottom of 11 x 7 inch baking dish. Arrange 3 noodles over this. Spread with ½ of the ricotta mixture. Top with 1 cup sauce and layer with 3 more noodles, the rest of the ricotta mixture and 1 cup of sauce. Top with the remaining noodles and sauce. Bake, uncovered until hot and bubbly, 20-25 minutes. Allow to stand a few minutes before cutting into serving pieces.


Sausage Casserole
Servings: 8 Points: 4

1 pkg 97% Fat Free Jimmy Dean's Breakfast Sausage
1 onion, chopped
8 oz. elbow macaroni
1 can 98% Fat Free Campbell's Cream of Mushroom Soup
1 cup skim milk
10 2% Kraft American Singles

Brown sausage and onion. Drain. Boil macaroni and drain. To the sausage mixture add milk and soup. Stir until heated through. Pour drained macaroni into casserole dish and top with 5 of the cheese slices. Pour sausage/soup mixture on top of the cheese. Place the remaining 5 slices of cheese on top. Bake until melted.


Mexican Baked Fish
Servings: 6 Points: 5

1.5 pound cod (or any other white fish fillet)
1 cup salsa
1 cup shredded cheddar cheese (we use the tex mex mix with jalapeno peppers)
1/2 cup crushed baked tortilla chips

Preheat oven to 400 degrees Coat a 9X13 casserole dish with cooking spray. Put fish in casserole (you can pile up the fish). Top with salsa, cheese and tortilla chips. Bake for 15-20 minutes, uncovered (fish must flake easily) Serves 6 5 points per serving We serve it with brown rice and garnish with additional salsa and sour cream (but you have to add the points for rice and sour cream)


Not sure if any of those fit what you're looking for. A lot of my better recipes aren't here at work, so.....
