Pumpkin Pudding Ingredients 1 small pkg. sugar free vanilla or butterscotch instant pudding 1 cup canned pumpkin (not mix) 2 cup skim or 1% milk 1/4 tsp pumpkin pie spice Mix together and refrigerate. SERVING SIZE: 1 cup POINTS: 2 I'll let you know how it is!!! |

Hello. What a miserable day out there this morning. What a great day it would've been to stay in bed! I put my electric blanket on my bed last night and I was so warm and comfy! I wanted to throw my alarm clock out the window this morning when it went off!
There was a job I was going to apply for here where I work but this morning I decided that I really don't think I'm qualified for it.. :( Oh well...maybe another one will pop up... I am so hungry this morning...trying to wait a while before I eat my Honey Nut Cheerios though. I really want some more coffee but that just means more points :( Booo. Hey ROCKER and TWIDDLE! :) |

ROCKER - I'm sorry you feel so alone. You know we're here for you! I know, it's not the same as having your parents, but we're still here, if you need us. Hope everything is okay with their house/property. Let us know if you hear anything. I'll probably be leaving for the airport sometime around 4:45 or so, as long as the flight is on time. It's scheduled to land at 5, but with getting luggage and whatever, I won't be down there right at 5. Things are cool either way - just let me know! :) (And I don't need to know before Saturday, so you can just call...) VIVA - What's your story, morning glory? How was the pudding? I made the crustless pumpkin pie last week...yum! I love pumpkin. :lol: I'm trying to get back on track with recipes/cooking, too. I find I'm most successful when I'm actually cooking meals (and planning them) and not just winging it every night. I planned this week, stopped at the store last night my way home for "supplies" (don't go to the store on an empty stomach!!!!), and hopefully this week will be successful, at least until Saturday evening. Guess that's it for me for now. I'll try to check back in later. Hope you're staying warm and dry, in spite of this awful weather! We may need to have a fire in the fireplace soon if this keeps up!! |
Morning Chickies! :wave: OMG, the new tenants have moved in above me and I don't know what the **** they were doing at 2 in the morning, but it woke me up and I've been awake ever since! :mad: If it happens again tonite I'm going to complain to the landlord. I get up at 6am to get ready for work and the last thing I need is them banging around at 2am! GAH--needless to say I'm a bit more than ticked. Had it not been raining I would have tried to go out and up the stairs to their door! :mad: :mad: :mad: I wasn't feeling well to begin with (think I'm catching a cold) so I had gone to bed around 9am. FRICK! to top it all off, my sinuses are messed up and my eyes feel like they're gonna pop out of my head! STUPID RAIN!
So today at lunch time I'm going to go pay my insurance and I think while I'm out I might do a little shopping...need some slacks for work. A little retail therapy never hurt anyone! Guess I better go...lots of appts. today not to mention all the paperwork! |
I turned on my heat yesterday evening...I had to! It was so cold!
The pumpkin pudding was great! I added more pumpkin pie spice than the recipe called for. I also added a dallop of light cool whip (not even one serving so I didn't count any points for it). It tasted like pumpkin pie! The serving size is 1 cup (and I actually measured it out) and that was enough to fill me up. :) My sister just sent me a recipe for beer bread, so when I go home I want to calculate the points for it. That stuff is so yummy! I was so mad because when I stopped at the store yesterday after work I got some light english muffins. I was going to have one with my 4 point omelet and my 4 point hash brown rounds. I go to take one out of the package and there is mold on them! YUCK!!!!! I was so mad. I saved myself a point for that meal, but still! :mad: |

Oh, I hate when that happens, VIVA! I find that most of the light stuff does go bad quicker, so I try to remember to put it in the fridge if I'm not going to eat it quickly. But it really sucks that you just bought them! What kind were they? I'm now hooked on the Thomas' Light Multi-Grain english muffins. I made breakfast sandwiches Saturday and Sunday using them, and they really made the sandwich taste better.

These were just the Giant brand...that's all they had there! I did email them about it, but I doubt they'll do anything. I would've taken them back to the store but I didn't feel like getting dressed and going out...and I was NOT keeping them on my counter. The mold was like dime sized...gross!
ROCKER: Let us know if you need back-up for these new tenants! LOL I have no motivation to do any work... Oh yeah, just thought I'd say that those Crockpot Liners they have out now are AWESOME! They make clean-up SO much easier...I highly recommend them! |
