Recipe by Janeva Eickhoff 1 IP Dark chocolate pudding mix (I used Wonderslim Chocolate Cream) 1 IP Apple or Maple oatmeal mix 1 tsp. baking powder 1 tsp. Splenda (I used stevia.) ¼ tsp. cinnamon 1/3 C. liquid egg white substitute (or 2 egg whites, lightly whisked) 1 tsp. olive oil 2 T. skim milk (I count this towards my daily milk allotment.) 1 T. water ½ C. shredded zucchini Preheat oven to 350. Place shredded zucchini in a microwave proof bowl and cook on high for 1 minute; blot cooked zucchini with paper towels to absorb moisture. Set aside. In a medium bowl, mix together the dry ingredients. Add liquid ingredients. Stir to mix, batter will be thick; add zucchini and mix to incorporate. Spray a regular size muffin/cupcake tin with cooking spray, spoon batter into muffin tin making 6 muffins. (I used a mini loaf pan.) Bake 15-17 minutes. Check muffins at 15 minutes by inserting a toothpick into the center of a muffin and make sure it comes out clean. If there is batter on the toothpick, continue to bake and check muffins each minute thereafter. Servings: 6 muffins = 2 IP unrestricted servings (or if using a mini loaf pan, cut in half and you still have the 2 IP unrestricted servings.) |
Thanks!! I'll have to try that next time I get oatmeal. I've done one similar with a pudding packet, and crushed crispy cereal. Hadn't thought about adding zucchini though. Hmm....

S-dr carbrite lemon bar (my restricted for today, every few days) L-home made chicken soup with about 2 ounces of chicken breast and some veggies cut up- certainly less than 2 cups D-skinless chicken breast grilled with salad made with about 2 cups iceburg lettuce, 3 cherry tomatoes, a couple mushrooms, a baby cucumber, chopped green onion, and dressing made with 2 tsp Evoo and apple cider vinegar. And I still am not losing! On Tuesday I did a workout at the gym with a trainer who worked me really hard and I can barely walk today. My legs are killing me going up and down the stairs! Poor quads! I saw a post before about exercise and holding water weight! I noticed I went up 2 pounds after that workout and have dropped less than a pound by today. Ok, what is that all about! |
