L IP chicken soup with 4 oz. ground lean turkey, 2 cups chayote "apple slices"
D 4 oz of some type of protein and 2 cups veggies (haven't decided yet)

I modified a zucchini + maple oatmeal recipe, and it ended up being really good:

Cheesy Broccoli Muffins

  • 1 package of Ideal Protein Broccoli Cheese Soup
  • 1 egg – beaten (I used 2 egg whites, and it was fine)
  • 1/2 tsp baking powder
  • ~1 tsp each of oregano and basil (I'll add more basil next time)
  • dash of cayenne (I overdid it :))
  • dash of garlic powder
  • 2 cups of diced frozen broccoli, thawed, with the water squeezed out

Beat the egg in a bowl. Add broccoli, baking powder, and spices, and mix. Add soup, and mix. If needed, you can gradually add water until you have a good batter (but I didn't need to).

Bake at 375 for 20 minutes in a well-greased muffin tin.

Makes 3 regular muffins or 12-bite size

And now I have a question: do we have a place where we keep recipes that are strictly on-plan, versus those that use alternate products? Also, am I allowed to post my recipes in Rainbow's threads (when they're open; it looks like the most recent one is closed)?

Basically, what is our recipe organization scheme? Thanks! :)

These look great! What kind of consistency do they have? I've found I have trouble with some of the other "muffin" recipes because they feel too rubbery/spongey to me.

It's a tiny bit spongey, I guess... and it might be even more so if I let them cool (next experiment!). But there's so much broccoli in there (or zucchini, in the original recipe I cribbed from) that it gives the muffin more structure than the ones that are just a packet and egg whites.

LInks to the recipe threads are in post 1 of the daily chat. We're currently on volume 4.

Rainbow is keeping the thread with her recipes locked to eliminate all the extraneous comments. People asked her if there was a way to cut down on the "chatter" to make the thread easier to read.

So, basically, she opens it to update and then re-locks.

I recently asked moderators if we (the IP sub- forum) could become it's own forum so we'd have more ability to organize.

Unfortunately, they aren't granting anymore forums, or even sub-forums for that matter. So, no matter how "big" we get, we can't organize any better than this on 3fc.
