You are NOT required to have one restricted per day. The protocol sheet for phase 1 says one ideal protein food at breakfast, lunch and snack; then farther down on the sheet it says you many only select 1 restricted food per day. So. You can choose all unrestricted products if you want to do so. Restricted items are more like treats form many IP'ers and some opt to stay away due to lack of control.

Got it, thanks! For me, that extra cup of coffee with the 2nd cappuccino packet is my treat. And the chocolate drink at night seems to curb any sweet cravings, so I guess it's all good for now. Thanks again!

I have been on IP as a loser and a maintainer since 2012...so I am quite aware of what the sheet says I also spent some time studying the diet as I considered becoming a coach.
The breakdown on the top of the protocol sheet simply gives you a guide as to what to eat at various times of the day. it does not specify restricted/unrestricted packets.
The diet IS designed for you to have one restricted item per day. No more than that, but the restricted IS part of the design.
There are coaches that prescribe to conventional diet thinking, that tell clients not to have the restricted (or just don't sell them restricted items) thinking that it will somehow improve their losses - we call this trying to "game" the diet. It rarely has the desired effect, and in fact NOT having the restricted can slow losses down.
It is rare, but there are people who are SO carb sensitive that the extra carbs in restricted items do cause problems - but it is VERY rare.

Ditto everything Scorbett said. IP is low enough in calories and carbs that cutting the protocol even more by not having a restricted doesn't make sense.
I didn't necessarily have a restricted every day - sometimes I ran out or wanted something else but I would say 80% of the time I had 2 unrestricted and 1 restricted.
