So today for lunch I wanted to use the IP potato purée. I cruised this website and found a recipe (from the recipes from Finland page) and made the potato puffs! Wow! That was almost like eating bread! So my thought are.. Instead of making muffins, what if I bought two large ramicans and made some sort of bun for burgers? So Saturday that's my plan!!! I'm sooooo excited!!

Please update if it works! I haven't tried any "recipes" yet...but that does sound good! :)

I made kale Chips from yesterday's discussion. Next time I'll have to monitor amt I start with. Who'd a thunk I'd eat too much Kale? (also, I'll go wayyy lighter on the salt)

Tomatoes are a higher glycemic veggie - that's why there are special sections of 'select', 'occasional', and 'restricted' veggies.
