Here are 3 recipes I have used. Two are rubs the other is an adapted sauce. the sauce may have been a better originally but, this was worked.
Emeril's Dry "Rustic Rub" Recipe:
8 T paprika
3 T cayenne
5 T fresh ground pepper
6 T garlic powder
3 T onion powder
6 T salt (can be adjusted to taste)
2 1/2 T dried oregano
2 1/2 T dried thyme
Chinese Dry Rub
• 1 1/2 teaspoons paprika
• 3 tbsp brown splenda (or splenda)
• 1 teaspoon salt
• 3/4 teaspoon turmeric, Ground
• 1/4 teaspoon celery seeds
• 1/4 teaspoon dry mustard
• 1 tsp onion powder
• 1 tsp garlic powder
This is a variation of a really good sauce from Everyday Low Carb Cooking (this book is very good BTW)
4 tablespoons soy sauce
5 tablespoons cider vinegar
1 teaspoon of garlic powder
1/2 cup of diced onion
1 tablespoons of oil
3 tablespoons of splenda
1/2 cup walden farms barbecue sauce (original recipe called for 1 cup tomato sauce) You might be able to sub a sugarfree ketchup here
1 tablespoon of chopped pickled jalapeno peppers (diced)
lightly saute onion in oil or butter until cooked, add the rest of the ingredients and simmer for 20-30 minutes.
Bake the ribs in a 325 oven, cover the ribs in the sauce and keep turning in the sauce until they are done
