I did. And WOAH. Tasty. DH even was all 'we can have those whenever...'

I put them on those low carb wheat tortillas, and they were delish! I sprayed a pan with Pam, sauteed my onions and peppers till they were translucent, and then grilled the meat on my foreman. I added the sliced steak to the onions/peppers and let them marry till DH got home. TASTY GOOD. Totally went into rotation.

I love these enchiladas... I use 2 chicken boobs, and I also add extra veggies to the insides (like peppers, onions and mushrooms). I usually only have veg broth on hand, so I use that, and no bullion cube but my amish-jarred stuff.

Hi everyone. Been MIA for awhile. My sister was in town for most of the month of May and we did alot of eating out. Between that and being out of town most of the weekends I gained a couple pounds and did hardly any cooking. Started back on plan this week. It is surprising how much I missed cooking. It has become a stress relief for me

Last night I made Flank Steak, roasted red potatoes and aspargus with butter balsamic sauce http://allrecipes.com/recipe/baked-a...-butter-sauce/ based on the reviews I swapped the amount of balsamic and soy sauce.

The downtown market, a few blocks from my work is back open on Tuesdays for the summer so I got some great produce, their leaf lettuce is amazing, I missed it so much. So tonight will probably be my turkey reubens and a big salad with leaf lettuce, spring mix, cucumbers, tomatoes, onion, red pepper, feta and kalamata olives.

We ate them over leftover whole grain pasta, and I made some veggies for in it too. So so so good. Way better than I expected!

Beans and greens for dinner here- yum. Beet greens, Chinese broccoli, chard, cannellini beans, onions, garlic, braised in wine and chicken stock, chicken sausage, and a French roll.

We have been on a grilling out kick. Weekends are usually bad for the diet but coming off a 3 pound loss last week I decided to keep my butt in gear. Here is what we made last night along with a salad with homemade buttermilk dressing. I promised I wouldn't share his chicken recipe - it was his granny's famous chicken I made the black bean salsa as follows-

1 can black beans rinsed and drained
1 medium red pepper diced
1/2 white onion diced
1T chopped cilantro
1 medium ear of corn cut from the cob (I cooked it on the grill brushed with olive oil before we made the chicken)
salt & pepper
1 clove garlic ran through the garlic press
juice from 1/2 of a lime

Tonight will be turkey reubens since I didn't make them last week, baked fries from http://www.skinnytaste.com/2011/02/b...ny-garlic.html and a side salad.

I'm making a quick, low-carb gyro again (had one last night, too) -- dairy- and soy-free tzatziki, ground lamb, and red onions wrapped in romaine lettuce leaves. Yum!

They are amazing! And you'd never know, using Pam or a misto, that it wasnt loaded with olive oil. We make them often, as my DH loves them a lot.

Kate, those potatoes do look amazing. I think I'm going to try them tonight, with grilled salmon and steamed broccoli.

Bake them really high, you guys. I make mine at like, 425... and you'll be able to tell when they are done, they get all golden and crispy. YUM.

with, lol, a side salad... on corn tortillas, with pico de gallo and fat free sour cream. DH has a golf scramble on saturday, so he "has to practice" (like that will suddenly make him better?! lol.) tonight and tomorrow, so I'm eating dinner alone.. which is fine. I like eating as soon as I get home from work, since I do IF! So I'll eat, and then tonight is Zumba! woot.
