Default Tacos??? Pork Carnitas Tacos~~~

PORK CARNITAS TACOS



CROCK POT PORK CARNITAS


start with a lean pork tenderloin



score the fatty skin to help it render



spice it up....i used 2 tbsp cumin, 1 tbsp thyme, salt and pepper



i use my mortar and pestle to grind up the spices and bring out the flavors!!



heat your skillet with 2 tsp olive oil



rub half your spices on one side of your pork tenderloin toast



place it skin side down into your HOT pan to sear
sear your pork on each side for about 3 mins each
add the other half of your spices and rub in before turning



turn and sear on the other side....



in the meantime, slice one onion in thick slices



line the bottom of your crock pot with the onions
this allows the heat to circulate the roast and adds flavor
you can pitch the onions when the roast is ready
or you can eat them as they are not caramelized



chop some fresh garlic and add to the crock pot



add some jalapenos and about 3 tbsp jalapeno juice
if desired!



add your pork on top of the onion bed skin side up
this allows the fat to drip to the bottom and keeps the pork moist



don't waste the drippings in the skillet where you seared your pork



de-glaze the pan with some chicken broth



this is what i used



pour this over your pork roast and now you are ready to let the crock pot so its job!



you can cook on high for a few hours
or low for a little longer
do not over cook, just cook until it easily pulls apart!



just pull apart easily with 2 forks



shred your pork and let sit until ready to eat and enjoy!!



take a spoonful or two of veggie shreds and place
in a small circle on parchment paper



microwave on high for 45 seconds...then carefully work fast...



easily peel it off the parchment paper and fold into a taco shape
it hardens as it cools and that happens pretty fast!!
so work quickly and do 1 taco at a time



now you are ready to fill and enjoy!!
i used tofutti sour cream mixed with 1 oz milk to make it creamier

red onions, orange bell peppers, tomatoes, jalapenos!!
you can use any toppings you like!!



just fill and eat!!

just dump it all into a bowl and enjoy your
CARNITAS BOWL!!!

Mmmmmmmmmmmmmm. My absolute favorite, carnitas. Thanks for those wonderful hours in the kitchen.

Default Cheesy Cauli-Tator Tots

CHEESY CAULI-TATOR TOTS





this was my big bowl of ORANGE CAULIFLOWER!!
you can use regular cauliflower too!!
but isn't the ORANGE SO PRETTY!!!

for a quick cook....you can steam or microwave your cauliflower



i added 1/4 cup chicken broth (you can also use water)
covered bowl with a wet paper towel
microwave on high 7-8 mins or until fork tender



let the cauliflower cool a bit...



then puree in blender or magic bullet




puree until thick but not overly processed
you want a little chunkiness to your puree!!



put it all back into a bowl to chill
TRY NOT TO EAT IT!!!



chill several hours or overnight
this recipe is perfect for leftover caulimash!!



for the cauli-tator tots...this is what i used
1.5 cups mashed cauliflower
garlic salt, paprika, salt and pepper, red pepper flakes and cheesy sprinkles...also dried onions but they got left out of the photo!!



measure out your 1.5 cups of cauliflower mash into a bowl



add the seasonings of your choice AND
3 TBSP egg whites



place the caulimash into a plastic baggie
i line a big cup to make filling easier



fill the baggie!!



squeeze the mash down into the corner and twist the top
so it doesn't squish out the top when piping
then clip off a tiny corner of the baggie



pipe tator tot size mounds onto parchment paper

BAKE 375 for 15 mins or until toasty and brown
finish with a minute or 2 under the broiler if desired




let cool a wee bit so they really hold their shape!



yummm spicy goodness!!!



moist inside!!! creamy!!



eat them plain or serve up with some wf or heinz low carb ketchup!!

OMG Tater Tots & Carnitas (why didn't I think of Carnitas?!?)

Thank You!

I'll have to stay away from the Land O' Lakes seasoning. Many "fake" foods give me migraines & are hidden sources of MSG (yeast extract). I also won't add the veggie shreds, however, I'm sure it can be made without either (carnita wrap = lettuce wrap!)

what to do with some of your leftover pork carnitas??
MAPLE HONEY BBQ PORK!!!



heat up your leftover pork in a skillet with only a teeny bit of olive oil
you want to "dry" out your meat so that it is like
an old fashioned dry rub bbq!!




mix
1 tbsp walden farms honey bbq sauce
1 tbsp walden farms maple syrup
dash bragg aminos


YUM!!!!!



goes great with the tator tots!!!

BBQ ANYONE???

CiNNAMON STREUSEL SPiCE CAKE with MAPLE TOFUTTi FROSTiNG!!!




with fall here....i thought i'd come up with another cake recipe for the holidays!!! yummy spice cake!!



i started with ip crispy cereal and dixie diners vanilla pudding mix

crush the cereal with a rolling pin...just roll back and forth!!



in a small bowl, mix the 2 packets together



add your spices...this is what i used
1/2 tsp of cinnamon, 1/2 tsp nutmeg, 1/2 tsp gloves and 1/2 tsp allspice



add 2 TBSP splenda or stevia in the raw
1.5 tsp baking powder
dash salt
and all the spices and mix well




in another bowl, add 6 TBSP egg substitute or egg whites
i used egg beaters substitute
whisk until frothy about 50 strokes




ADD 2 TBSP Walden Farms Maple Syrup
ADD 1 tsp Vanilla
ADD 4 tsp olive oil
mix well




now...you will add half your dry mixture into your egg mixture



mix well, then add the rest of the dry ingredients and blend until smooth



the batter will be thick



pour into your baking dishes and smooth to the sides
BAKE ON 350 for 12 mins. DO NOT OVERBAKE.




yummmm moist fluffy cake!!



for the frosting, this is what i used...
walden farms maple syrup and tofutti




2 oz tofutti and 2 tbsp maple syrup



start to mix...it will look clumpy...but just keep stirring!!
it will come together and be nice and smooth!!




see!! rich creamy frosting!! try not to eat it all from the bowl!!
it is so delicious!!

place your cake on a small plate and frost!!



for the streusel topping i used about 6-7 IP apple cinnamon puffs
crumbled and some extra cinnamon




makes 2 servings!! goes perfect with cinnamon stick tea!!




SHALL YOU COME FOR TEA AND CAKE???

i used to use walden farms marshmallow dip and walden farms maple syrup mixed before i started using tofutti....maybe you could use that!

I know what I'd like to make every day for lunch for the next two months! I finally made the potato purée English muffins, toasted and spread with WF Peanut Spread and WF raspberry glop! I have missed sandwiches soooooo much. My tastebuds are very happy now!
