Was so freakin hungry after my long hike! Had a vegan tostada topped with beans, rice, lettuce, tomato, guac, and lots of salsa. Also had 4 corn tortilla chips. I was a -4 and ended +3.
Skipped breakfast. Having a big lunch to hold me over till a late dinner. Really weird schedule today
Spring Roll Salad
-.5 c vermicelli
-1 carrot
-1/2 red bell pepper
-1/2 avocado
-3 egg whites hard boiled
-1 hard boiled egg
-some green onion
-vietnamese inspired dressing I made out of sesame oil, rice vinegar, miso, braggs, and sweet chili sauce.
I'm so freaking full.
Was a -3 and ended +3.5. Not quite over stuffed but more full than I normally aim for.
A can of wild Alaskan sockeye salmon (Vital Choice). A can of mussels (Goya). A can of squid fillets (Goya). A crab cake. Spring green mix. Kim chi. 3 dessert spoons of honey cappings. 2 tablespoons of hummus. 1 teaspoon chili powder. 1 teaspoon of Tobasco sauce. 2 dessert spoons of red onion. 1/2 tomato. 1 mushroom. 2 dried Turkish apricots. 2 dried figs. 3 pickled quails eggs.
Ian-I think its so cool how you've really found this unique diet/WOE that is totally you haha yep I could not eat what you eat! Do you eat it all at once, like mixed together?
terra-My sister is 22 and loves speghetti-os! lol
Skipped breakfast(just had coffee) and skipping dinner(will have whiskey though ). Instead made an epic lunch.
Gluten/Dairy free quiche with broccoli, tomato, and watercress. Summer berry salad with romaine, watercress, strawberries, blueberries, avocado, and red wine vinaigrette dressing I made. Then dessert was gluten/dairy free strawberry cake. Time consuming, very heavy on the calories, but so worth it! I'm going to post two pics bc I really am so happy with how they turned out.
In Brazil lunch is our main meal. Sandwichs are considered snacks and not lunch material (its unusual to have a sandwich for lunch and if you do have you'd say you had a snack for lunch). Breakfast is small and dinner varies depending on the region you live. I'm explaining this because all my lunches are somewhat big and take more than 20 minutes to be eaten.
Today i had:
A big caprese salada with buffalo mozzarela and some pesto sauce as my cold dish
Whole rice and quinoa, potato salad (with mayo) and baked potatoes as my hot dish.
I'm a vegetarian, by the way.
Tomorrow i might eat at a "per kilo" restaurant! Yumnmnmn!

Sounds delicious.
I feel better if I eat a large lunch. My breakfast stays simple and quick and if lunch is large a simple small dinner works for me.
