Darby.. Im the same way, if I haven't made it I want to 'test' make it before.. but soo much work :) Lazy me.

So I didnt weigh this morning, I'm waiting until tomorrow morning... I'll post our weights Tomorrow Morning...

I weighed in at 213.5, so...

That makes me happy.

Anyway, here's the taco soup recipe:

2 cups chopped onions
2 15 oz. cans kidney beans (drained and rinsed)
2 15 oz. cans pinto beans (drained and rinsed)
1 15 oz. can corn
1 15 oz. can Mexican tomatoes.
1 15 oz. can diced tomatoes
1 15 oz. can tomatoes with chilis
2 4.5 oz cans diced green chilis
1 taco seasoning packet
1 Ranch dip mix packet (make sure it's dip and not dressing, or else it's not vegan. You can probably leave it out because I didn't think it added much)

Saute onions and transfer to crockpot and add everything else. Cook on low for 6-8 hours.

This makes a lot so you need a big crockpot. I added a pack of burger crumbles the last hour it was cooking.

It tastes great with a little tofu sour cream on top and some crushed tortilla chips.

Oh I’m so furious with myself after weighing in today. I can’t believe I let myself get back up but alas I have. Well it’s better to stop it now then to continue the upward surge. I was at 208.8 this morning and now I have to change my ticker – grr. For my Thanksgiving goal I’m going to go with 204 and for my Christmas goal I’ll aim for 196. That’s just a little over 2lbs a week and should be doable if I get my arse in gear!!

I chew gum all the time! It does help with the snack attacks and keeps my teeth nice and white ;) Yes some gum does have animal products. I generally chew Extra or Orbit which to my knowledge do not with the exception of the Extra Polar Ice. If I’m wrong let me know!

Darby – I’ve been making soups and chili a lot lately also or big casseroles so I don’t have to spend much time cooking. I’ll definitely be trying your taco soup out – that would feed me for days! I’m looking forward to this crazy busy time passing so I can try some new recipes again! How’s the Tofurky roast? I’ve looked at in the store and thought of getting it for Thanksgiving but it’s a bit pricy if it’s not super tasty

Good morning ladies!....
Im 223 this week, so down 2lbs since last week. Im happy after last weeks number. I dont have Thanksgiving when everyone else does, but I just found out that that same weekend is my Husbands Christmas party. It sounds shallow but I hate the idea of meeting his coworkers when I look like this. Oh well! I just keep reminding myself that by next years Christmas party I will look hot and then it will be worth the embarrasment this year!

It's just human, in this time & country, to feel that way. But regardless of your weight, if you are living healthier until the Christmas party this year, you will look great!

If you go feeling embarrassed, it will change how you act and how people see you. And that will make a bigger difference than your weight :carrot:

I mean...for instance...I weigh over 300 lbs. But I don't really get too much crap because I don't give them a reason TO give me crap.

Thank you girls! Thats so true! I dont know why Im being so hard on myself about this stupid Christmas party! I think its partially because I dont fit into any of my old clothes from before my pregnancy. So, I either have to buy a new dress for my short time fitting this size, or I have to wear more maternity clothes (and trust me, nothing makes you feel sexier than wearing maternity clothes when you arent pregnant!)
Either way, you guys are completely right, I need to get over it and own it! Thanks guys:)

Erin-confidence is everything. Buy or borrow a great outfit and strut on in there.

Heather-my husband loves the Tofurkey which is why I buy it. I think the taste and texture are good, but not really worth the price. I think for Christmas I might try the chickpea cutlets from Veganomicon.

Tonight I'm trying a pumpkin soup. I'll let you know how it turns out and post the recipe if it's any good.

Alright, I need to go work out now or I'll never do it.

hmm well ill weighin tomorrow and if it's less ill post it as my weekly weight lol ive been on track all day and now that those 2 tests are done i can relax at for tonight!

Mmm I've never had a pumpkin soup but I'm willing to give it a whirl!

I made a toss-stuff together butternut squash soup Sunday that I'm in LOVE with! Sorry there's no exact measurements I didn't measures anything at the time.

1 medium butternut squash peeled and cubed
1 small-medium onion
2 small yellow potatoes
1 large carrot
about 4 cups of veggie broth
dab of vegan butter
cayenne
cumin
nutmeg
salt and pepper
lite coconut milk

I sauteed the veggies in a bit of Earth Balance in the soup pot - maybe 7 minutes or so. Then add the veggie broth and cover. Cook until vegetables are tender (I think about 35minutes). Blend veggies and broth until smooth. Add coconut milk until desired consistency and spices to taste - I like mine with a bit of a bite from the cayenne. Let cook a bit more to blend the tastes.

THE Heather-that sounds really good! I've seen the roasts before at Whole Foods, but never tried them. Are you the only one eating vegan at this? If you are you could buy the one serving and save any extras for lunches, etc. $15 isn't bad for all that food.

My pumpkin soup turned out alright. Kind of bland. I had to spice it up a bit with cayenne and I think next time I'll cook up some sweet potatos to put in. Anyway, I'll post the recipe tomorrow.
