Good Saturday Morning Chicas,
Just wanted to pop in and say HI! Also K did good on his report card; he brought all his C's and D's up to B's and C's, 2 of his old D's were B's this marking period, so I'm thrilled. He is doing so great now that he is getting the help that he needs. I hope all are having a wonderful weekend with this great weather. Last night K and I had a great evening out. Today we have errands to run and some interviews to go to and tomorrow he will be at GM's house while I have to go to La Fayette Prison to take the mother of a friend of mine who is there and hasn't seen his mother in over 6 months. Sad situation but they are trying to make the best of it. Well I'm off to get a cup of coffee and make a little breakfast before we leave for the day. BTW, here is a little recipe, easy and good to make. Chicken/Shrimp/Beef/Ham or Vegetable Fried Rice 2 cups leftover cooked brown rice 2 eggs (mixed in bowl) 1 pkg mixed vegetables (I used one can mixed vegetables) 1/2 small onion diced 1/2 small pepper diced 1 bag of precooked shrimp or whatever other meat you might have already cooked and leftover at least 1/2 pound(I used Ham since I didn't have the shrimp and forgot to thaw anything else) low sodium soy sauce 1 tsp olive oil (or any oil you consider healthy) Spray large skillet with Pam and put in your oil, heat through. Throw all veggies in, after onions have become translucent add eggs and scrambled moving constantly and adding Pam as needed so not to burn. Let eggs get cooked and dry through. Add rice and whatever meat you chose. Mix all together. Add Soy Sauce to taste. Cook till all is heated through. I made this last night for dinner and it was great. It is an all Core recipe so I am not sure of the point value. Sorry. But it did turn out great. Felt like I was cheating on the plan. HAVE A WONDERFUL DAY!! |

Good morning chicklets!
Hope you all had a wonderful weekend. Of course, the weather was gorgeous, but it's all gone today for the Phillies home opener. We're going to the game, for better or worse. :-/ It never fails, we have bad weather for the game. This is the 4th year in a row. Grr. But at least I only have to work a half day, so I can't complain too much. Had a good weekend for the most part. Saturday we were slugs and watched movies all day and night. Sunday we did stuff around the house (finally took down the outside Christmas lights!) then went bike riding down at the John Heinz Refuge, came home, went to the movies (saw Inside Man), came home and went for a 2-mile walk, and then settled in for the evening. I got up this morning to do my running, as tough as it was to get out of bed. Hopefully I'll be able to stay awake for the game! :D Okay, off to do my journaling post...*sigh* Have a good Monday all! |
Good Morning Chicas,
As you all can see yesterday was a horrible day for me food wise. I used 15WPA's. But that is what they are there for and I needed to use them since I was out on the road all day. Went to LaBelle, PA to visit my x-husband's brother in prison. Left Saturday morning at 3:00 and returned last night at 11:00pm. I'm dead. But I'm feeling good about the whole eating situation, because had this been another time in my life I would have opted to eat McD's, Burger King, Cinnabon, and you name all those other rest stop places that have the junk food from ****. Besides that wonderful trip, my weekend went well. Starting on Friday when I went out on a date with my son, compliments of CHICKIE. THANK YOU. I hope everyone's weekend went well and all had a relaxing weekend. TWIDDLE how was the movie? CHICKIE how was Friday and how are you feeling? HI VIVA and DUTCHIE Not much else to say, so I'll TTYL. HAVE A GREAT DAY!! |

Good morning all. I'm so tired right now I can't even see straight. This was the worst weekend to have to spring forward and lose an hour of sleep. Saturday we went to lunch at Panera and then ran errands. Saturday night my cats decide to freak out on each other and go nuts. They did this once before, and then were fine. Not this time --- it's still dragging out even this morning...grrrr. Saturday night I didn't get to sleep til 3:30am and got woken up at like 10am. VIVA was so tired to begin with and definitely needed more sleep than that. Oh it was just a bad night. Saturday DBF and I went to the school playground to shoot some hoops, then we had to catch up on what was recorded on the DVR. Tonight DBF has class so I'm going to shop for some things I need for my Pastry class, go to Ulta, Whole Foods, etc. I'm gonna be one busy bee!
ROCKER: I hope everything went well on Friday night. I also hope you had fun at the party on Saturday! TWIDDLE: Sorry to hear that it's going to rain for your game today. Hopefully you can dodge the rain drops! SPILLIE: Wow, what a long day! I watch Top Chef on Bravo and someone made something with Plantations ;) DUTCHIE: I hope you didn't have to work too much over the weekend. There's an end in sight!!!!! I better get going. We have 2 new co-ops coming in...ugh. I hate these days...LOL. I'm trying to drink tons of water since WI is tomorrow. My stomach is feeling funny this morning :( I hope to check back in soon. I still have to do my journal. |

SPILLIE - The movie was pretty good. Some of it was hard to follow...got esp. confused at the end, but overall it was good. A little twisted, kinda like Ocean's Eleven...things aren't always as they seem. I recommend it!
Let me share my recipe for the pork I made last night. I just felt like cooking in the crockpot, and didn't feel like running to the store, so I made this up with what I had around, and boy was it tasty! 1 jar salsa 1 can corn niblets, undrained 1 pound boneless pork chops (could use chicken...honestly, I didn't know what I was using because it was frozen and I hadn't marked it!) Throw in the crockpot on low until finished. I started with frozen meat and let it cook for about 8 hours, but we probably could've eaten earlier. 4 servings, 4 pts a piece. Add add'l points for rice, noodles, or whatever. VIVA - WAKE UP!!!!!!!!!!!!!!!!! |
