Good evening all. Its been a quiet day here. DH just left for work so no going out this evening. I made some chicken and brown rice for dinner. It was okay but not great. I've got some chicken breasts in the fridge now I need to do something with. I'll have to think on it. Woke up this morning to a mild dusting of snow. It all melted off quick but it is oh so cold here.
M2A- Welcome to the best support board ever. Sugar Busters is the so good for you. Heres hopeing you do great on it. Bob- Good to hear you're doing a bit better and Kate too. Made the chicken stew and added pot pie to it, a family fav. I had some pot pie but left the potatoes. I used split chicken breasts because the bones add flavor, then I take the meat off the bones. By the time I stood nd did that, then made the pot pie, rolled it out, cut it into squares alternated the pot pie and potaoes in the pot, cleaned up I was done in!! ROSALIE:: Brown rice pudding in the crock pot!?! Sounds heavenly. Care to share the recipe. I haven't had rice pudding in years. MONET: When I moved I sold and gave a lot of stuff away and never had any regrets....except.....my old brown tea pot with the pretty colorful flowers and also a clock my husband especially liked. It sort of got lost in the shuffle and went to uction, TONI: If you like Mexican I have quick and easy recipe for those chicken breasts. Put the breasts in shallow baking, spread salsa over them, enough to cover, drain one or two cans of seasoned black beans and pour over top the salsa. Cover with foil, Bake at 400' 20-30 minutes, depending on thickness of breasts, remove from oven, carefully remove foil and sprinkle grated cheddar and Mexican blend cheese on top. Recover with the foil and let sit a few minutes. It is really good. You can serve it with rice, but we like the beans enough that I don't bother. Besides it would be more starch. This is quick, easy and delicious. I just sort of eyeball infredients. FRUIT: This is one time you don't care if a little bit of weight shows!! May good things happen. |

I feel like I've been http://bestsmileys.com/marching/1.gif all day! I know I slept some last night, but after being up since 4a.m. doesn't help! Even though I'm feeling better, I still am running full speed for Kate. She has been up since about 8:30 a.m. which is the longest since she got sick. She told me yesterday that she believes it was meant to be that I'm not working. I don't believe she could have been by herself these last two weeks. I've watched her lose weight from not eating and she seems more feeble...I know she's 85yrs old, but she went down quickly. I've got to get her strength built back up. She has eaten more today...first thing she wanted two scrambled eggs, bacon and toast. She never has been one to eat a lot during the day, and then tonight I fixed baked fish and we split a baked potato. I can feel that my blood sugar was low but felt better after I ate supper. TONI...why not make white chili out of your chicken. I've never made it, but have eaten it and it's good...just chunk it and make it like usual except without the beef. This is the recipe I would use: Chicken Chili Recipe from: Barefoot Contessa Parties by Ina Garten We had been making traditional chili at Barefoot Contessa for almost 20 years. I decided to update it with chicken to make it lighter, and it's even more popular than our regular chili. Servings: 12 8 cups chopped yellow onions (6 onions) 1/4 cup good olive oil, plus extra for chicken 1/4 cup minced garlic (8 cloves) 4 red bell peppers, cored, seeded, and large-diced 4 yellow bell peppers, cored, seeded, and large-diced 2 teaspoons chili powder 2 teaspoons ground cumin 1/2 teaspoon dried red pepper flakes, or to taste 1/2 teaspoon cayenne pepper, or to taste 4 teaspoons kosher salt, plus more for chicken 4 cans (28-ounce each) whole peeled plum tomatoes in puree, undrained 1/2 cup minced fresh basil leaves 8 split chicken breasts, bone in, skin on Freshly ground black pepper For Serving: Chopped onions, corn chips, grated cheddar, sour cream Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Preheat the oven to 350 degrees. Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. BOB: Thanks for the clarification on the 'presents'. I got so frustrated with my commissions that I put them aside for a bit. Today was fun, but at the same time frustrating when things just would not go the way I wanted. The next day things are 'clicking' I will just throw mugs, mugs and more mugs. If I do several dozen, I ought to be able to get yours done. :yes: I HAVE the glazes....:rolleyes: I just got frustrated with the stuff freezing, then blowing up, etc. I now understand why some potters will not take commissions. Seriously, I NEVER had these problems when I was working a lot years ago.... :shrug: I am glad you and Kate seem to be on the mend... I am praying for you to find a PERFECT job...

Hope that you all had a great day with your sweeties!! Mine was way more than I anticipated. I spent the morning at my Mom's getting all of her tax preparation done.Then DH took my Mom and I out to lunch. Chinese!! I was so very proud of myself as I ordered a Hamburger Steak minus the fries and bread with extra salad. Wooo Hooo!! After we took my Mom home DH presented me with a beautiful watch with a matching bracelet. What a gem he is!! I can't believe how sore I am this morning after my short walk yesterday. I am so out of shape. I have continued at Curves the whole time that I have been gone from here, but I guess it is just using different muscles. I think that the jogging had more to do with the sore muscles than the actual walking. I am sore in places that shouldn't be sore!! M2A-- Welcome to this wonderful board. These ladies are absolutely the greatest!! I wish you the most successful journey. Stick with these gals, and you will be amazed. BOB-- So glad that you and Kate are both feeling better now. You are right, it is not fun when everyone is sick. Solly-- You are doing a fantastic job. My SIL is doing WW and loves it. She does very well on it with all the exercise that she does. Melf, Sef-- Glad that you are both safe and sound. Rosalie-- I can't believe the weather that you are getting, Brrrr....... Monet-- Sounds like you are enjoying yourself with your pottery. hi ladies,I didn't know about the tornadoes hitting La. until I read your board!!! wow! I hope everyone is ok.I grew up in La, in Delcambre,home of the shrimp festival!!! I still have family there,and I used to have alot of family in N.O. before Katrina but they have all moved to Church Point and Mississippi since then. Louisiana has been hit so hard in the past few years! Again,I hope everyone is ok. Well, I have the Sb books on order, but I went ahead and went to half price books today and bought them anyway, I just couldn't wait! I will give the others to my mom, she's doing the WOE with me. Happy Valentines to all, I actually got my first mammogram tonight at 7pm, what a Valentines treat! I asked to see the films after the mammogram, and i saw quite a decent sized white spot on one of my breast films, I came home and looked it up on the internet and It resembles breast cancer, I know i need to wait to get a professional opinion, but when I saw that white spot (about the size of a quarter) on one breast and the other didn't have anything like that I knew it had to be something. But I'll have to wait to see what my doctor says, so say a little prayer for me! I'm not overly worried, just concerned. I am really glad to be starting this WOE and joining your group. Hopefully I'll lose my 50 lbs before Christmas. My mom and I went to Whole Foods today and I got lots of good whole grain stuff. I was wondering, is there an approved foods list by brand name? Some of the stuff I have read is kinda contradicting, like Triscuits, yes? no? how many? how often? which cheeses are ok? I know that this program will get me healthy and hopefully I'll lose weight, but also if there is something wrong with my mammogram, I know it will keep me strong and healthy thru the whole thing...I know I'm getting ahead of myself, but it's on my mind right now.I hope to hear from you all soon.Happy Valentines day!--M2A:)

Hope everyone was able to avoid the candy yesterday. We went out Mexican for dinner (DD's fav) I was pretty good. Was going to have my 12 chips allowed, but that went by the wayside. the scale was the same this morning so that is good. Back to the gym tonight. I didn't fix anything for supper. I had planned to make some potato soup, but did not have enough chicken stock. So it may be salads or sandwiches. Gator, if you are lurking, Happy Birthday girlfriend. :balloons: :hat: :gift: We miss you, please come back. Monet, Valentine's Day is a day to celebrate love. There's no better way then just spending some nice, quality, romantic time together. No gifts necessary. Sef, I am in Ky. Pot pie. You just gave me an idea for supper. I know I have a ww pie crust in the freezer. Thanks. I have a very similar chicken recipe. Pretty much the same as yours, but I sprinkle a package of taco seasoning over the chicken, add the black beans and a can of Rotel. I don't do the rice either, I put it in ww tortilla shells and make burritos or tacos. Yummy! I also made mine inthe crockpot. Rosalie, It is 14 here this morning. Pretty cold if you ask me. I'm ready for summer. Stay warm. Bob, Taking care of Kate I'm sure has not helped in your recovery. I believe things happen for a reason. Good thing you were there for her. Good morning! I slept ok last night, for a change! Just finished my morning routine of espresso in bed with Tom. We sure are going through the espresso beans with him home! :lol:
I did not get my teapot trimmed and assembled last night. It was still too wet, so I wrapped it up and saved it for today. I hope it goes together ok today. I am supposed to go to lunch with James today, and we have a friend coming for dinner tonight. I want to fix something easy for dinner. I thought about a ham, but I would rather eat chicken or fish, so I am back to the drawing board so to speak. A chicken pot pie might be good, except Laura made that for her and Justin for dinner last night. Maybe I can get her to make a bigger one for dinner tonight! :lol: She needs to learn to cook! :yes: M2A: I will definitely be praying for you. Please keep us posted, cause now I am going to worry about you if you don't! :( Triscuits are fine. In fact, they are a great legal item. If I need a crunchy salty snack, I can satisfy the craving with a few triscuits. As for brands, well, it depends on where you are, I think. I use Nature's Own 100% ww bread. I like it because it does not have high fructose corn syrup in it. I avoid hfcs due to being diabetic, because it raises my blood sugars so badly. Reading labels is the best way to determine what to get...you want stuff to be less than 3 grams of sugar per serving, and on things like tomato sauce where there are natural sugars that make it higher, make sure there are no ADDED sugars...and sugar can be called dextrose, maltose, sucrose, etc. so read carefully! GATOR: :balloons: Happy Birthday! TEENSY: Hamburger steak at a Chinese restaurant??? :) You are a better woman than I am! How sweet of your hubby! I know what you mean about the soreness! I have heard that the machines at Curves can only take you so far, then maintain...you might want to add some weights at home to increase the muscle mass for greater burn. Just a thought. SOLLY: I am glad the chips did not effect the scale! :) I find it hard to behave at Mexican restaurants...but then, I find it hard to behave at Chinese, Italian, American....well, you get the picture. mommy2alex, WOW, a down-home Vermilion Parish person! I grew up in Gueydan & have been in Kaplan since my 1st DH died in 1983. My DH now of 16 years is pastor at Pecan Island, so we drive the 30 miles every Sunday.

Scale was down again this am. If only I could keep it going down! I've been doing really well this week.
Last night was Pork & Brown Rice Casserole. Delish! Dh loved it. He gave me a necklace & bracelet set of cut crystals & I gave him a coffee mug with a picture of his first Shelties on it. He loved it so much he didn't want to put it in the cupboard until the newnest of it wore off so he put it in the bedroom where he could look at it. lol Well I'd better get ready because I have a 2pm dentist appt. |
I just got up at 11:30...I spent the entire night listening to Kate cough and finally MADE her take cough medicine at 5:a.m. Do you know how hard it is to MAKE a grown WOMAN take something???? She swears she was asleep the whole time...ANYWAY...THanks for listening..this is sure something I'm not used to doing...
MONET...Unless you're just practicing, don't make my mugs till I have money to pay you...I will eventually get them, but i don't want to owe you for them. Finished the teapot...not sure if I like it or not. I had to re-do the spout twice before I liked it. Boy, am I rusty! :) I will try and post a pic of it.
Tom is having a phone interview with a recruiter...the guy got his resume about an hour ago, and called him before Tom could even reply he was in such a hurry to talk to him! Sounds promising to me! :) It sounds from the side of the conversation I am hearing the recruiter has a number of jobs he is trying to fill that Tom is a good fit for. James is taking me out to lunch. I still have not decided where yet...but he is leaning towards an Italianplace...I can always eat a big salad, so that is fine with me. After lunch, I am dragging him to the ceramic supply place since I am almost out of clay! I suppose I COULD wait until Monday... I will try and post later...but I have company coming for dinner. :wave: |
I am sitting here with the sun streaming in the window and I can barely see the computer screen. It's still very cold but at least we didn't get any more snow. I woke up too late to go walking this morning but I did go bowling. I got home late last night then spent about 45 minutes talking to my sister in Australia.
Monet - Hope Tom gets some job offers. Toni - I wasn't walking outside yesterday. I drive to the mall which is two minutes away from my condo and walk inside. Thanks for having so much confidence in me:cool:. Sef - For the rice pudding I used 1/4 cup brown rice and about 4 cups of milk. Add whatever flavoring you like - I like vanilla/nutmeg but will sometimes use cardamom. I also cheat and add a few raisins.:(. If you want any sweetener you can add it at the end. I cooked it on high in the crockpot but I think the heat was too high as the milk separated. Low probably would have been better. This new crockpot I have seems hotter than my old one. I sometimes do it on top of the stove but then you have to be around to watch it but it does come out creamier. The way I used to cook rice pudding, and the way my family liked it, was to use 2 cups of cooked rice, 2-3 eggs, two cups of milk, dash vanilla and nutmeg, a couple of dabs of butter and cook it in the microwave at 50 power for about 16 minutes. Now I am on my own I do it the old-fashioned way.:). Your Mexican chicken breast recipe sounds good. Will have to try it. Missy - WTG. Fourteen weeks already. I'm so happy for you. BOB - Just hang in there. The brown rice pudding I make the same way as the white. (See my note to Sef above.) Teensy - I'm sure that sorenesss will go away soon once you get used to using those muscles again. M2A - That's great that your Mom is doing SB with you. It does make it easier. Maybe it wasn't a good idea to see that mammogram. Hopefully it isn't what you think it might be. I hope you get the results soon to put your mind at rest. Solly - Itwas 0F this morning - now it is about 5F but at least we have beautiful sunshine which makes me feel good. Melf - Glad to see that the scale is moving down for you. |
Hello Ladies....
I didnt make Curves this morning as we got a few inches of new snow and Dh has a fit if I drive before the snow plows have had a chance to do their jobs. We are out in the boonies and I guess he just worries about me. So I am going to try and get in some Pilates this afternoon. We have been trying to get a copy of DH birth certificate so we can apply for a passport. I went on line to Helena Montana and put in an order for one. He got a call on Monday from Vital Statistics in Mt. that told him that they have no B. C. in his name for his birthday. The odd thing is that they have 2 B. C. for his younger brother. One with Ted's birthday and one with his own birthday 15 months later. And his Mother's maiden name is incorrect also. So someone really screwed up and now we have to go to court and apply for a legal name change as his name legally is the same as his brothers!! He goes to court on the 22nd and it sounds like it should be an easy thing to do. Isn't that strange? All these years he has just used his baptismal record as one form of ID and no one ever noticed that he had no B.C. M2A-- I am hoping with all my being that your "spot" turns out to be absolutely nothing!! Please don't get yourself all worked up, and wait for the results. My prayers are with you. Solly-- I am very fond of Mexican. I made some Chicken enchiladas last weekend with La Tortilla WW shells. It was sooooo good!! I asked DH why he decided to have Chinese now that he knew I was really trying to get back on plan and he said it was more for my Mom, as he knew that was her favorite food. Monet-- I just haven't walked since last fall. We live on a hill, so I start out walking up hill and finish coming down. But I also jogged down hill some and my body is definitely not used to that. I have sore muscles where I have NEVER had sore muscles. I really love Curves, and we just got in a couple of new machines. I especially like the stretching station. Now we don't have to get down on the floor to complete all of the stretches. Melf-- Congrats on the loss!! BOB-- It is hard taking care of someone that isn't feeling well. Hang in there and don't get too wore down yourself cuz you need to recoup too. Monet-- We would love to see a picture of your tea pot!! You are such a talented woman. All the cooking, cake decorating, art.......I envy you!! I don't have a talented bone in my body!!!! Rosalie-- What does the sun look like?? I woke up to 3 inches of new snow. |
