I just made these, yummy - and I did not have almond flour so I ran almonds through a coffee grinder. Tonight is our pizza night, so I will scrape the toppings off the pizza have it with a salad and have a cheddar biscut on the side (maybe sprinkle it with some garlic powder).

I am going to go eat now.

Carol Sue I'm glad you enjoyed the pasta! Food tastes so much better without a side order of guilt! I hope the scale isn't bugging you too much. You are in the doorway to Onederland getting ready to enter again!

I'm feeling a little perkier today. I ate more for lunch than usual, on purpose. For the first time in ages, I felt satisfied and didn't think about food all afternoon. Green salad with avocado, kidney beans, chicken, evoo.

Dinner was shredded cabbage with chicken, lentils, carrot, soy sauce, evoo.

I've been looking up allowable foods on eslowcarb.com. So nice to read chicken, oil, kidney beans are allowed in unlimited quantities. Olives, it turns out are not allowed. Go figure! Glad to be doig things 'my way.' That said, I like reading bits about the diet--avocado is 1C/day. Read that just in time, lol! Once I am firmly established in SLow Carb eating, I might relax and have more, but for now a little external structure is helpful.

Y'all, I am struggling with plain water. It's fine with meals since I have the flavor of the food to carry it, but to drink it otherwise, ick. I think I'm going to have to take a look at the herbal tea the next time I'm at the store. Or I could drink plain water with meals and just add Mio to my water outside of meals. I have to do something because I'm slowing down drinking water and I know the reason is because I don't like it.

Carol Sue, I'm so glad you enjoyed your pasta and meatballs! And wow, this thread does have a lot of views! I hope if there is anyone out there who wants to join us, they do!

Chickadeee, that recipe looks YUMMY! How clever to run almonds through your coffee grinder! I'd say I hoped you enjoyed your dinner, but I'm pretty sure there's no doubt, lol! It sounds delicious!

Mars, yay! I'm so glad you are feeling perkier! Your lunch looked wonderful and I'm so glad you ate until you were satisfied! That's exactly how we should eat, not till we're stuffed but definitely till we're satisfied, knowing that what we ate will hold us over to the next meal. With the types of foods we're eating--non-starchy veggies and healthy and filling proteins and fats--and plenty of water, we don't have to worry too much about overeating, lol!

Jacqui I ran into the same thing with plain water. I decided it was so important to my health and appetite control that I reverted to Mio until I cold find an alternative. It might help to taper the amount you use.

Re tea, just one or two herbal tea bags/2liters water will add enough flavor to get me to drink it. I steep the bags in a cup or two of hot water and dilute to 2L cold water. I also add a few drops of stevia and do NOT like the leaf extract which is supposed to be the least processed. Sometimes I leave out the stevia, but I''m finding it makes me enjoy the water more.

Oh, I must say these turned out great and very tasty. If I am careful I could cut them in half and toast them. I could make a small sandwich with them, DH even liked them.

I figure they are my daily serving of nuts, but I won't have one everyday. They will go in the freezer.

Jac, come on put your big girl pants on and drink clean fresh natural water, the way God intended it to be. I know it is hard, but it is good for you. I love Oblong tea, but I have a hard time finding a flavored tea I like. And I drink it straight not sweeteners. Good luck with the water intake. (Last year when my DH was getting treatments, he had lots of blood work done, and once the nurse asked him do you like water, and he said yes, and she asked him why he doesn't drink it. He asked how she knew, and the blood work showed low water intake. So, now he drinks big glasses of water everyday, because he knows it is good for him. - I never knew they could see that in blood work!)

I am not getting on the scale today. Too bad. I have a balance beam scale that I use normally, but I wanted a digital one, so during the past 2 weeks we bought 2 of them at Goodwill for a couple dollars each. The first one was a Tanita scale that also measures body fat and water. It didn't have directions so DH bought a different one that is just for weight. He got on it and said it is off by 3 lbs and the adjustment screw doesn't seem to work. Well, after that, I got on the Tanita scale and it weighs me the same as the scale he bought, so I've got bad news for him, I think it's the balance beam scale that's wrong. I found directions online for the Tanita Scale so I will try to figure it out. He insists that the balance beam scale is right, but they can go out of adjustment, too. I will have to look to see how to adjust it. I don't think it matters if your scale is right or wrong, as long as it shows you if you lost or gained.

I don't know what I'm going to eat today. I will probably have eggs for breakfast. If that's late enough in the AM I will not have lunch. On Fridays we usually go out to eat so it will depend on where we go. I know DH is going to want to go to the casino, but I need a week off from gambling, so maybe not. Whatever I eat, it will have to be on plan, after my 2 carb days in a row.

Jacqui, when I need water, it has to be plain water. I don't drink as much as I should but when I feel dehydrated I can really guzzle it down. At home, I don't drink anything with meals, and when I go out I usually order water with lemon. I never used to drink much water until we went to Las Vegas. It was October, but it was still so hot and dry that we had to be carrying bottled water around with us constantly. When we came home we started drinking bottled water so we drink so much more that way. Those plastic bottles aren't good for the environment but they make us drink more water, which is good. I think the water with Mio should be just as good as plain water if it gets you to drink more. It's better than no water at all, or diet soda. Maybe you could use less Mio in each glass of water and wean yourself off of it.

those biscuits look very good! I was surprised there was no nutritional info with that recipe, or did I miss it? You seem to eat such wonderful, healthy meals. Do you do a carb day? If not, I did yours and mine this week. LOL

Mars, I loved the sound of your cabbage mixture. I love everything in it. Was it cooked or just shredded raw like coleslaw? I like it both ways. I eat cabbage several times a week. For a while, I was really on a cole slaw kick and was making it often. I usually like to saute my cabbage with some onion, then add some spinach, kale, collards, lentils and top it with Feta cheese. Yummy. DH would never eat that. LOL

Chickadeee, I love when people who are trying to help you speak honestly to try to keep you on track, and I accept the challenge to put on my big-girl pants (at least for now)! That's great!

Carol Sue, I agree that water with Mio is better than no water, but I will try to continue to drink plain water, unless it really does start to affect my intake. I drink 12 cups of water a day just with meals so my intake can't be too terrible, but water throughout the day helps me not to snack, so I'll give it another concerted effort (for now)! I agree with you on the scales. It doesn't matter if it's off by a few lbs as long as it's consistent. My Dad's dial scale was 3 lbs lower than mine, the Y's fancy digital one is 1.5 lbs higher, but it's mine I'm going by, so as far as I'm concerned, mine is correct, lol! :

Well, somehow I have thrown out my back (could be from helping DH move a solid oak bookcase into the house yesterday ), and I think I am going to skip the exercise tonight. I felt it in my back last night at the gym and knew it might be problematic today and it has been. Even so, I've tried all day long to convince myself to go anyway, that it might loosen it up, but I'm not convinced. With one hip sticking out farther and one shoulder hanging down lower than the other, each step hurts, and last night's exercise didn't help, so I doubt tonight's would. I'm hoping some ibuprofen and a good night's sleep will do the trick.

Holy Moly Jacqui! You are on a roll!

Weight is about the same 168.5

I posted in another thread about how I had a perfect day--felt energetic a truly well-fed. While cooking up some ground turkey for the week, I had a little dish and added the Walden Farms BBQ sauce that I'm trying to eat up once and for all. I had 2 more little dishes of it--actually one of those tiny pyrex ice cream dishes, lol. Even zero cal BBQ sauce is a problem for me. So I dumped out the rest. Could hardly call it 'throwing away food' since there is nothing in it but chemicals.

I also do better when I cook in the morning. In the evening, my resolve is much lower and I'd do best to avoid the kitchen altogether.

I went to bed feeling too full, even though it wasn't all that much food. I am beginning to recognize it, that unpleasant overfull stomach feeling. If I can just get my brain on board, I'll be fine. Easy, right? Right?????

Carol Sue re cabbage, I like it both ways, too. I buy a head and slice it really thin like cole slaw. This week I had some nice fat carrots that I steamed--chopped & added them in still warm. The cabbage was just right--crunchy but a little softened. Really makes the flavor pop. Well, with a bit of the braggs amino (aka soy sauce) and evoo. I love cabbage. Another favorite is to slice it top to bottom into 1 inch 'steaks'. Spry or drizzle a bit of evoo and sprinkle with garlic powder. Bake at 425 on a cookie sheet for about 15 minutes, flip and do the other side.

I like kale but it cause a skin rash around my nose.

Chickadeee, I've been looking up info on apple cider vinegar and I definitely need to get the good stuff with the mother. Not only is is supposed to be good for weight loss but for blood sugar regulation, among other benefits. When you put it in hot water, do you add either honey or stevia? I read where someone adds honey and said it tastes kind of like a tea then. I wondered if that was true.

Mars, I've kept wondering about claims for 5-HTP helping with sleep since I've continued to feel sleepy during the day and awake at night. My bottle of it has no directions on when to take it, so today I looked it up, and apparently you're supposed to take it at night! Doh! Lol! Were you taking it at night? I've been taking it in the morning with my other vitamins. Well, today I didn't. I'm going to try to remember to take it before I go to bed! I knew something wasn't right, haha! And hey, good for you throwing out a food causing you problems!

Carol Sue, I hope you enjoy eating out tonight! (But not too much! )

Jac, with the ACV, I add agave, just a drop or two. It would make a good tea, but if you drink it like tea, sipping here and there, you would be exposing your teeth to it more, and it is not friendly to tooth enamel. I drink mine straight down the hatch, I like it first thing in the morning, kinda wakes me up because it is tart.

Carol Sue, I do not do the Carb Day like you guys do, I feel it would set me up for failure. I allow myself 12 grain toast on Saturdays, and maybe a special treat (like a big ole chocolate brownie with chocolate frosting a 1/2 inch thick!!!!! well maybe not that special)

But I want to get the mindset, that this low carb thing in my way of eating from now on, I just want to get use to it so it comes natural and I do it all the time. But still know I can have something special once in a while, because that is life.

I am having a taco salad for dinner, with no shell and extra lettuce for dinner, maybe a beer with it.

Tomorrow there is a festival in town nearby, Strawberry Fest, so that should be a fun day. And then I plan on spending some time in my sewing room sewing. Haaaaaaaa.

Chickadeee, Tim Ferriss allows 1-2 glasses of red wine a night; you allow a beer here and there. Either has GOT to be better than plain water, LOL! I am sticking to the water but I am not happy about it! Have fun at the strawberry festival tomorrow! If anything calls for a Carb Day, I'd say that does! And thanks for the info on hot ACV. You make a good point about not having it stay on teeth for any length of time. I've just had a lot of work done to my teeth so I want to take care of them!

I tried the ACV water back when everyone was talking about it, saying it was good for weight loss and blood sugar, but I didn't see any changes. I got away from it because since it is acidic, it could be bad for my psoriasis. Since it wasn't something I was crazy about I figured why risk flaring my PS even more. Now I heard that eggs can cause a flare, especially the whites, but I cut way back for 2 weeks and didn't see a difference so I'm back to eggs. I love them and don't want to give them up.

I think I did well yesterday, overall.

B 1 egg with sausage patty (McD saus/egg McMuffin w/out the muffin)

L 1 C Cottage Cheese

D 6 whole chicken wings, split a salad with DH, and a bite of my husband's fried fish.

I notice that I am not eating veggies like I used to, and that could be part of the reason my weight has gone up. Veggies are very filling and very low calorie. My lunch used to be all veggies, but I bought that cottage cheese so I feel as though I should eat it. I won't buy it anymore...I think the veggies are more important.

Mars, I put one of my avacados in a paper bag, inside a plastic bag. They both ripened equally. I bought 2 because they were only 69 cents, but I don't eat enough of them to have 2 ripen at once. I will eat one today and the other tomorrow then not buy any for a few days. I have certain foods that I like to eat all the time. It doesn't bother me that I'm eating the same thing over and over. Actually, Tim F says to do that. I start feeling that I should have more variety to add different nutrients so I buy other things, but then I don't eat them in place of my favorites, but along with, and I'm just adding more calories.

Chickadee I feel the same as you do about the carb day setting me up for failure. I am trying to do this to see if it does boost my metabolism, but as we saw this past week I ended up having 2 carb days in a row, so it backfired. For me, I just want to be able to have pasta or lasagne once in a while when I make it for DH, similar to you having your toast on Saturday.
You are doing very well sticking to your plan.

Jacqui, I very rarely take supplements because when I read the possible side effects for them it scares me off, but I have been taking the Probiotics and Vit D for 3 days now and I'm starting to notice a lowering of my blood sugar. That was not a reason for taking them and could be a coincidence. I am taking them for the psoriasis and it will take longer before I see results, if I'm going to have them.
