I was thinking if you were going to cook it on the stove, to brown the chicken, it wouldn't take much time to get it cooked.
I have a stew recipe and after you add all the ingredients it has you bring it to a boil and then lower heat and simmer for about 1 1/2 hrs. That would work for the chili I'm sure. The longer you can simmer, the better it gets, I'm sure.
Can't wait to try it.
Also, I got a small crock pot at Walmart for around 10 bucks, not the dip size, a little bigger, it would probably be ideal for cooking for one. We got it to use in our camper.
Good idea, I think I will cook the chicken first. After that, it probably wouldn't take too long. I can't wait to try it, it sounds delicious. Might be walking into town tomorrow to get what I don't have... and that'll give me some exercise as well!
Plans for super bowl? None yet, but my son will probably be here to watch the game with DH. DS is trying to lose weight, too, so maybe I'll fix some lite veggie pizza wedges for appetizers, then have some of Steph's chili.
I bought some ground chicken when I went to the store this morning, that sounded so good! I'm going to make this buffalo chicken dip, it was in with the coupons, I'm going to lighten it up, I think with the wing sauce it'll be good.
2 10 oz. cans of chunk breast of chicken
2 8 oz. cream cheese (I'm using light)
1 c. ranch dressing (again lightening)
1/4-1/3 c. pepper sauce (I guess depending on how hot you want it)
1 1/2 c. cheddar cheese (I always use the 2%, 2 pts. for 1/4 c.)
place cream cheese in shallow casserole, microwave on 50% 'til softened (2-3 mins.)
stir in drained chicken, dressing, sauce and 1 c. of cheese. Sprinkle top with remaining cheese.
Microwave at full for 2-4 mins. until hot and bubbly.
It says serve with crackers, chips and celery sticks, so I'm just going to have it with celery sticks.
I think it'll be great and way better for us than having buffalo wings!!
Mmm... chili... I'd love to make a white chili, I haven't done that since last winter sometime. That recipe looks good!
Re: diet chocolate dr. pepper -- I've never had it but my friend is in love with it. Apparently it tastes like a melted tootsie roll. Might be good if melted tootsie rolls are your kind of thing. I still haven't been convinced to try it
I'm going up to my dad's house this weekend to visit with him, and my sister and her family are going to come by too. I just found out my dad & stepmother are on a no-sugar, low-sodium diet for health reasons, and that they've been getting some exercise in... So I'm kind of not dreading eating there this time! Usually they go way overboard on the food they prepare for us, but it sounds like it'll be under control this time. They live out in the country and it's supposed to be pretty nice so I'm gonna throw my bike in my truck and get a little rural riding in

Anyway -- that chili recipe sounds great! I'm going to give it a try soon. We don't follow football in my family (DH is planning to watch the "Toilet Bowl" -- a real show! It's on the DIY network I think), but have fun to those that do!
I have a pancake breakfast to attend with my son on Saturday morning (benefit for his school), and he's already trying to help me with my program choices (he said "let's bring your oatmeal packets -- surely they'll have hot water on hand for people's tea!"). I'm really grateful for all the support I've got -- here and at home. It really helps me keep my eye on the prize! Hugs to you all...

Awww, LizzieW, that's so sweet that your son helps you plan ahead. How old is he?
Man, I haven't ridden a bicycle in YEARS. The one I have is too short for me now, that's how long it's been. What I really want to do when I'm in a little better shape is learn how to roller blade. I used to LOVE roller skating when I was a kid. I bought a pair of blades about 10 years ago and never used them. That's one of the things I'm looking forward to, activity wise.
Mmmm, chili. My mom makes an AWESOME turkey chili. It rips holes in my gut, but man is it yummy! LOL Oh, and on-plan, as well.
LizzieW, your son sounds so sweet! My support network basically consists of these forums - I live with two housemates that eat whatever they want, whenever they want, and load it with gravy, ketchup, mayonnaise, and etc, and another housemate who barely eats and if she does, it's chips or yogurt or chocolate. So I agree, the support here is excellent. I spend a lot of time on here these days to encourage me not to eat whatever snack I've got my eye on, lol. And it seems to be working - scale was at 159.8 today, which breaks into the next "decade" for the first time, though it's not my official weigh-in day yet. It totally made my day though! I think a lot of my success has come from the support in this community because I'm not going to the meetings and I don't have WW Online either.
That Dr. Pepper sounds absolutely revolting. I don't like regular Dr. Pepper anyway, but diet cherry CHOCOLATE? Ewww. lol

I really like rollerblading, hafowler. But inside! lol We have a roller rink near us and I've been there a few times. Outside, I find that since I'm not very good at it, every rock and curb and bump is just another reason to fall over (the other being my real lack of rollerblading ability!).
My old mini stepper broke, but I got an email from Amazon saying that my new one is on its way! I am so excited to try it out, as I spent a bit more money on this one than my old one, which was really a waste of money in the first place. That, and it was so incredibly loud! Hopefully having a stepper again will encourage me to exercise more regularly, but I have done pilates two days in a row now, and will probably do some more tonight, so that's a small step in the right direction!

I don't know if you have been doing Pilates long, but I love it. I find that when I am consistant with the Pilates, inches seem to fall of my waist and it make you feel so strong once you get over the feeling that every muscle in your core hurt
Ooh, thanks for telling me that Steph, it is particularly inspiring! No, I haven't been doing Pilates very long... this is only my fifth time (as once I posted here, I went and did my workout). Now that you have said that, though, I think I will definitely stick with it! I have a friend who swears by it, and she is what got me started on it. How long do you figure it will take before I start seeing a difference? I know I could feel it in my abs this morning, and I pushed myself harder tonight too, so hopefully I will have that dull (but pleasant!) ache when I wake up tomorrow. I have heard it takes about 3-4 weeks to start actually noticing a difference. I am going on a cruise at the end of March so if I stick with it for the next two months, surely it will make me a bit more ready for the horror that is my bathing suit!!
It has been a while since I've posted anything I've been in a funk lately. I think I've mentioned that I had twins that were stillborn 4 weeks ago; ever since then I have been on a rollercoaster and I don't think I'll be off of it for a while. I was doing good the past two weeks (especially with my WW) but this week has been horrible
It is 3:20 am (my time) and I am WIDE AWAKE! I usually start getting sleepy around 4 and won't wake up until 3 in the afternoon! Then I wake up feeling like I'm starving. So I run to the kitchen and eat ANYTHING and EVERYTHING in sight!
Sorry, I don't mean to bring all this up. This has nothing to do with WW.
I'll just say that I haven't been on track this past week and I'm ready to pick myself up and keep going. It's just hard. I feel like I've already ruined it.
Maybe I'll stay up, eat a healthy breakfast, go for a 30 minute walk, and get a couple of hours of sleep. Maybe I can get myself back on a regular shedule...
Zoesmom, I'm so sorry to hear about your twins. That must be very difficult to deal with. Don't be too hard on yourself if you have a bad week, but perhaps having something like counting points and getting in your water/exercise to focus on will help you get through it.
I can offer advice on the crazy sleeping though. I live in Canada but go to university in England, and every time I go back and forth, I'm an absolute mess with jet lag (it's worse coming to England than it is going back to Alberta). I was falling asleep about 4:30 in the morning and sleeping until 3:30 or so in the afternoon for about four days before I finally got really fed up with it. I found that when I had a 9 o'clock class to get up and go to, even if I was exhausted from falling asleep at 4:30 in the morning, if I stayed up all day until around midnight, that helped. Also, when I was getting really frustrated with trying to sleep on my own, I used melatonin strips and they knocked me right out. It might be something you should look into if you still have trouble sleeping in a few more days. Whatever you do, when you wake up so early, set an alarm so you don't sleep into the afternoon again. It will do you far more harm than good (trust me on this one, lol). So if you go back to bed at 5 or 6, after your breakfast and walk, try setting your alarm for 11 or some time that is at least still in the morning! It might be hard to roll out of bed, but it's even harder to try to fall asleep the next night! I'm sure that this week will be much better for you! Put your not-so-successful week behind you and start fresh! I had to do that last week... last week was a bad week for me too! Good luck!!

Zoesmom - it's ok to talk about everyday things here. After all, it's that stuff that influences our eating. I can't tell you how very, very sorry I am to read about your babies! Somehow, I missed that info before.
It helps me to talk about it, of course. I just don't want to make anyone else feel uncomfortable. That's all.
Freedomreigns - What are melatonin strips??? Are they OTC? Or do you need a prescription?
Since I got out of the hospital, I've been on Antibiotics and Vicodin. You would think the Vicodin would knock me out but it hasn't. I guess there's a part of me that is fighting. I feel like my body is dead tired but my mind just keeps going.
As far as going out to eat: I haven't even step foot in a resturaunt yet. I'm too scared. I do good enough just to eat at home.
But that WW Chili sounds REALLY good. Thanks for the recipe!!!
BTW, does any one of you have a MySpace? Just wondering; Thought we could support each other on there too.
