64Peppergirl: Would you share your recipe for the pork chili? Sounds delish!

B: IP lemon pudding
L: "Potato rolls" made using the IP potato puree, 2 cups arugula
D: Trying out the "Taco Bell in a Bowl!" also salad with 1t olive oil, 2 cups bell peppers
S: IP chocolate pancake

It's my first time trying the chocolate pancake. I wonder if it will turn out well made as a mug "cake"?

I'm home today (another grrrr snow day)

I have a roast in the crock pot with celery, leeks, mushrooms.

I'm also making a meatloaf with celery, bell peppers, leeks, and some leftover radishes from a veggie tray I took to a party the other nite.

So...roast tonite and meatloaf another nite!

All I need to do is plan the veggies to go with it (tonite is caulimash)

B: Quest bar & coffee
L: WLS cocomint hot chocolate
S: cucumber w/ garlic salt
D: see above
S: probably more cocomint hot chocolate (so good when it's FREEZING outside!...I like fruity stuff in the summer)

L - Boiled Egg, 1 C cucumbers, 1 C Celery and IP Wildberry yogurt Drink with 2 Cups romaine
D - Chicken/vegetable soup. (I add a bit a chicken broth - I have been told that is okay - any thoughts)
S - Pudding (maybe as pudding, maybe added to a hot drink)

I use organic, low sodium chicken broth all the time.

Thanks IPN. Is it fat free? I have a problem finding low sodium and fat free (or 99% fat free is usually as close as you can get)

Lunch: Chocolate Brown Quest Bar, shredded red cabbage with chayote squash and apple cider vinegar
Dinner: Tuna salad with celery, onions. I usually top this on cucumber sliced
Snack: Chocolate Muscle Milk Light

D-Fresh Salmon again with either roasted broccoli or spinach
S - Probably wild berry yogurt again. Always stuffed after dinner.

Have you had salmon recently? It is a once per week protein

Here is the Pork Chili recipe I use. I measure out 3 servings of the pork, and veggies so that I have two extra servings I can freeze for later. I serve mine with a little mashed cauliflower usually.

Green Chile

1-2 quarts chicken broth
24 oz lean pork, cubed into bite size pieces
2 teaspoons chopped garlic
2-3 cans Rotel tomatoes with green chiles
3 cans (4 oz. each) chopped green chiles
1/3 can chopped jalapenos (less if you don't like it hot, I use the whole can)
salt and pepper to taste

1. Brown pork in a small amount of oil in a heavy Dutch oven. Add remaining ingredients and bring to a boil. Reduce heat and simmer at least 2 hours. This can also cook in a crock pot all day on low.
