Hi everyone back from a great trip from Vegas to see my man. I have a weeks worth of reading to do on this thread. I stayed OP and did well. Missed my WI last week due to Vegas so looking forward to the WI this Friday.

Recipe report... I made moo shu chicken tonight. I had the plain crepe mix and made it into three pancakes. See recipe thread for what I did... It was delicious!

Week #4 down and still lovin' it!
 
Last weekend my DH took me to the Oregon Coast for our 5th anniversary. I had already made my mind up weeks ago that I was going to eat whatever I wanted while celebrating. So I did and had some well deserved alcoholic beverages too. (4 weeks w/o alcohol + weight loss = cheap date!)

Went to my week 4 WI yesterday and was down 1.6 lbs., 1.3% body fat and another 5 inches overall. I was shocked! My coach said probably lost everything prior to the cheating. She also said with my muscle mass, I probably got right back into ketosis after only about 24 hours.

Even though this was good news I have to stop and think, how am I going to keep this in perspective? You know the part in movies where someone is trying to make a major decision and there's always a devil on one shoulder and an angel on the other? That's kinda what's going on with me after this WI.

After going through both pro's and con's as to what difference 1 day cheating made, I have decided not to risk my weight loss success based on 1 not so bad cheating experience. Who knows, if I did that again I might end up gaining or worse yet, going on a binge. That's not what I signed up for.

I'm more determined than ever to stay OP until I reach my goal!

Thanks! nope, light skin, blue/grey eyes and a natural blonde. you should dye your hair red! don't be scared because the thing about red is that it never stays. i dye my hair just about every 1.5 to 2 months. by the time it's ready to be dyed again, it has washed out to a strawberry blonde. even if i dye it too bright a shade of red (like the most recent time), it fades to a nice shade in about a week or so. so, i say do it! you are losing a bunch of weight, why not mix up your appearance a little more!

Foil works great - or you can pan sear it on the stove-- start with a non stick skillet - a spray or two of olive oil -- season the salmon and begin cooking it skin side UP....(you can do this on moderate to high heat)...after a few minutes flip the salmon, put a lid on it-- squirt in a bit of lemon juice and reduce the heat....cook for about 10 more minutes (salmon is best served a bit pinker in the middle)-- If you did in fact get this salmon from whole foods it is EXCELLENT and needs very little spices added -- salt, pepper, some lemon, perhaps some tarragon, a bit of dill, a few shallots...excellent. If you want to poach your salmon you can do that as well using lowfat/low sodium chicken stock -- saute garlic, shallots, and herbs (dried or fresh -- I always heat my herbs even dry ones first) -- add 1-1.5 cups chicken stock -- add your fish -- put on a heavy lid and just let it poach in low heat for about 20 minutes...when the fish is finished turn up the heat to reduce the stock by 1/2 add a bit more lemon and capers ....now you have an excellent IP sauce to serve over your salmon with swiss chard. (and if you are really wanting to do it up...make some pureed cauliflower with fennel) -- as for fennel - I roast mine and then throw it into things like pureed cauliflower or as a garnish to a salad or fish -- I often sautee fennel to serve with smoked sea salt scallops the flavor of fennel compliments shrimp and scallops nicely. Oh my goodness! I hoped someone would chime in with wisdom like this. :D I really appreciate it. About the Swiss Chard, I think the rainbow one looks so appetizing.

Thank you so much for the suggestions! Next week I will try poaching the salmon. I ended up wrapping it in foil with lemon, dill, salt and pepper and it is in the oven now. I meant to put sliced garlic in there too but I forgot. I had to work late which I wasn't planning on and I'm just so hungry! I'm really looking forward to this salmon.

The shrimp I got at Whole Foods were awesome too! I'll have to get some for tomorrow to eat with the fennel. I've never sauteed fennel with shrimp before. I always just saute the shrimp with lemon and Old Bay. I grew up in Maryland, can't help myself on the Old Bay! I even sprinkled some on a lobster tail last week but it totally overwhelmed the lobster. Lobster tail was new for me too, I can see how people would like it with butter only. The taste of lobster is so delicate and light. I'll have to try that once I'm on Phase 4.

Thanks for the cooking advice! :) We are allowed to have capers on IP? If so I am really excited about that. And I think I'll skip the shallots since they are onions and we're not supposed to cook onions. Correct me if I am wrong.

those look awesome and i want them! you can make sushi with cauliflower rice or veggie burritos! yum. you'll have to let me know how they taste!

If you're a sushi fan maybe try making faux rice with cauliflower and use these for some kind of sushi roll?

I'm going to try and find these at a local store here - i'm needing to mix it up a bit and i miss my sushi - course the stuff i like is the deep fried tempura ones :(
