For my chicken cacciatore I use chicken tenders and lightly brown them. Put them in a skillet with a can of diced tomatoes and juice, with a can of mushrooms, then some seasoning, then simmer on low until chicken is cooked through. I used to make this with bone in thighs and drumsticks, and they have to simmer longer. But DH prefers the boneless chicken tenders. Sometimes I buy the diced tomatoes with basil and onion. I tweaked this recipe from a TV cooking show to make it something we would like. I like to have meatballs with my spaghetti to add protein to the meal.

Trish, does your DH eat the bun from his McDonalds cheeseburger? That would have gluten.

Here is the recipe I tweaked for my chicken cacciotore.

Carol Sue Thanks for the recipe. i may try it sometime and see if he likes it. I cook chicken breasts and sometimes cook it with onion soup and top his with swiss cheese and mine with mozzarella or Parmesan. Then sometimes I cook it with marmalade and top with cheese. I would love it with the tomatoes the way you do and use the chicken tenders. It would be a nice change.

DH always takes the top part of the bun off his burger and only eats the bottom half.

I remember you talking about drinking water during winter. I too have a very difficult time drinking it like I do during warmer seasons. Cold drinks make me cold since I've lost weight even in the summertime, but drinking it now during the cold weather, I really freeze. It doesn't h elp that DH runs the ceiling fan even when it is cold because he is alway hot. DS and I think it is the blood thinner Eliquis because DBIL has done the same thing since he started taking it.

Elequis is the blood thinner DBIL was on. They took him off it and now his stool is back to normal color. They did not find anything else that could be causing him to lose blood. I hope they are right. He called today and he is going back to the first place he went for Rehab. We visited him there once and it is very nice. I guess he will continue rehab to try to get him walking again, or they have other shots they are going to try.

Trish, the reason I use chicken tenderloins is because they cook quicker than chicken breasts. You could use any kind of chicken you want.

DH talked to the guy who installed our new furnace. He said that this is a high efficiency furnace and it is drawing all the moisture out of the air in our house. That's why the air seems so dry at night. We could use a humidifier if it's too bad. I will wait a while and see how it goes. I just hope our heating bill doesn't go too high. A new furnace is supposed to lower it, but with inflation they say all utilitiy bills are going to go up.

If your DH is eating a half of the bun, that is gluten. If he does not get the rash when he eats that then he is probably not gluten intolerant. From what Mad said, it does not have to be a large quantity to have an effect. I guess he could be reacting to something else he's eating.

I have been dragging tonight. Even got hungry but I probably need water. I've learned that sometimes my hunger is really thirst. I took the magnesium out this morning so didn't take it to night so hope a good nights sleep and I will have more energy tomorrow. Also need to make myself drink more water too.

Hi all, back to 157 post fasting. BS was 5.3 which is in the low 90s to you. I am surprised no DP going on. I tested at bedtime last night and it was the same. I rarely test except fasting a couple of times a week these days, and this is lower than usual. I get the low 5's from time to time, but not regularly. Overall, I am ok if its higher if it means I am dumping stored glucose and glycogen from my liver.
I am planning high fat yogurt and my nut/seed "granola" for brunch, but have not decided on supper. Carol, I would prefer meatballs, but DH prefers we brown ground beef and add it to the sauce. He likes it quite thick. I don't want that, but maybe some chilli would be good. I like chicken cacciatore but he does not, so not worth the effort.

Trish, I am not sure about your DH's rash. But he is not alone in not "wanting" to know about gluten sensitivities. And I have to laugh when he says he doesn't eat bread. Any bread is eating bread, including the bottom bun!. I am not sure where the gluten was, but it is likely from what we call "cross contamination". Which means it was not added to the food, but resulted from someone handling food that had gluten, (like flour) and then handling the food without gluten. This could have happened in my own kitchen. Usually I was DH's dishes after mine, and we don't re-use the dishcloth. But neither of us is perfect in this regard, so I am not even sure I can blame either restaurant. Either way, it is from a crumb, or a tiny bit of flour or something like that, something invisible. Not from a bun!

I am early because it is a blustery day, or night in this case. We woke up to the blind in the bedroom flapping from the wind and we had to close the window. There is rain and lots more wind. I hope it will pass in a while so I can walk the dog.
Have a good day friends.

Mad, I also brown ground meat and add it to the sauce. That's not enough meat for me . I still like a few meatballs with it. You are doing well, staying below 160.

2 days without Magnesium and I don't really notice a change. I will do 7 days and then decide what to do. I heard that Magnesium can cause strange dreams but I have always had them. I have been retired since 2010 but I dream about being at work a few times a week. I also have romantic dreams that include men I don't know, so I'm not dreaming about a particular person. In my dreams I am always young, 30 ish, and thin. I can understand the romantic dreams meaning that I want more romance in my life, but 47 years of working was more than enough and I don't miss it at all.

When my DGS was having behavioral problems in preschool he was put on a gluten free diet to see if it helped. He had no other symptoms. The diet didn't help so they stopped it. He ended up on meds which helped. They took him off the meds for the summer and in the fall he said he didn't want them, and it ended up that he was fine and no longer needed them.

Trish, I am drinking more water but its just making me pee more!

I am only weighing when I don't feel fat. Today was one of those days. I am UP .2 !! Not down as I thought.

I am still in the Lose A Pound A Week challenge on MFP. Finishing up my second year. Year one started at 196 and ended at 192. 4 pounds lost in that year. This year isn't over yet but at 187, I'm down 5 pounds lost. The only good thing about this is I'm maintaining my losses. I don't participate much. I just weigh in each week. To be honest, a lot of the members are repeats and I don't think anyone is losing a pound a week but doing better than I am. I want 2022 to be better for me. I started this thinking anyone can lose 1 lb a week and that would be 52 lbs which would put me in the 140s. What a dream!! I want to be more serious about this. I would even accept 1/2 lb a week!!l. So I have 4 more weigh ins this year and hope to spend those 4 weeks psyching myself up for success.

The definition of insanity is doing the same thing expecting different results. I have tried so many things and nothing has worked until now, IF and reduced carbs. I could do lower carbs but I don't think I could stick to it long term. I have to find it in my mind to stop slipping up so much. The little slip ups add up over time. If I am not successful this third time I don't think I will continue. I cannot seem to connect to these people like I can here.

Fatmad You are doing great staying under 160s. Hope your weather improved as the day goes along and you can walk your dog. I thought it was funny that DH thinks he doesn't eat bread either, because he does eat bread from time to time and not just the bottom of HB bun. Men are funny sometimes. However, I have to say that I don't want to go gluten free either and hope I don't ever have to. I hope your rash is better.

Carol Sue I gave up doing low carb for the very reason that I finally had to face the fact that I am not going to stop eating them. Now I can't go crazy with them but I have kind of learned how much and how often I can have them as well as what I can and cannot handle. Sometimes because of how it affects scale or bs and sometimes just because I can't keep my hands out of some of them until I've eaten the whole box or bag. Not easy and it still isn't. I understand about being more comfortable and relating here. I feel the same way.

Weight bounced back up to 180.6 yesterday and didn't budge today. However, I did the same thing last month so it may be a pattern. If it goes like it did last month I should drop some more weight sometime. So I just have to be patient and ride it out.

DH wanted spaghetti today but we don't have any spaghetti sauce... he only eats one kind. LOL He also wants the meat broken up in small pieces, but I think that is because it is hard for him to chew. Carol Sue I have some frozen meatballs I bought because I saw someone on FB WW had on their plate, but I don't like them alone. I think I will add a few to my plate this weekend when I make spaghetti. DH decided since we can't have spaghetti that we can have soup so we are having soup and salad today.

Have a nice day everybody.

We,went to the local casino today. It was ok. DH says,he will continue going there because it is so close. I don't like it because there is nowhere for me to sit to read unless I just go sit at a machine where no one is playing. I didn't try going out in the mall. There has been so much violence in malls lately its scary. We wanted to go to Texas Roadhouse for dinner but thought it would be crowded. We went to Bob Evans and here they started closing at 5 pm due to lack of servers. The restaurant next door was so crowded with people waiting outside. Wendys drive thru was lined up all around the building. Everyone in our town wanted food!! So we got McDonalds and I had McNuggets.

Sometimes I make my own spaghetti sauce but mostly I buy Hunts because its $1 or less. We only like vermicelli which is slightly thicker than angel hair. I think we will have that on Saturday.

I didn't realize that a crumb of gluten can have a bad effect, like Mad said. I knew it didn't have to be much. I can eat bread without any problems so I know I am not gluten sensitive.

Carol Sue We will have to go to Walmart one more time this year to get DH meds and then I hope we don't have to go any more until next year. The traffic was so bad this last time we went. I tell you nothing that is going on in this country is stopping people shopping here.

I agree it is scary to go to the malls these days. We actually don't have a big enclosed mall to go to any more. We had a beautiful indoor mall here but sometime in the past few years before we moved to TX it slowly lost stores. Everything is in open malls and individual stores. Not places where you want to shop when you have to be out in the weather unless it is a nice day. Once Sears and Montgomery Wards closed most of the other stores in the enclosed mall left too. I have no idea what is in there any more. I think the only store that is still there now is Dillards.

I think I ended up with a 6 or 7 hr eating window and calories were less than 1200. Not sure since I used water in my cream of shrimp soup and I didn't eat all of it. So I may be way off on the count.

When DH#2 was living, I made spaghetti and chilli and almost everything I cooked from scratch but DH and his DW#1 didn't. Since DH doesn't expect me to cook from scratch, I don't. I brown the ground meat and add the can spaghetti sauce and then put it in the crockpot until DH gets up. Can't get any easier than that. LOL

I think that is interesting that you are going to have it Saturday because I am going to the local store after I go to the beauty shop in the morning so I told DH we will have spaghetti Saturday. LOL I use the MG spaghetti for me to make it more WW friendly and DH eats the thicker spaghetti.

Cowboys playing tonight so not sure if I will get to bed early like I usually do on Thursday or not. Depends on how the game goes.

Hi friends: still 157 after eating plenty yesterday. So if I can get thru the fast today, I should be lower tomorrow. I will be happy to be low before I go for my 2 days of meeting next week. I will plan to eat 18:6 those days but not eating is not really an option.

I have booked a covid vaccine booster for myself and DH, so we will feel ok to see people in person over the Christmas holidays. I am swayed by the research showing that among the vaccinated, the people most likely to have breakthrough infections are older, and much more likely to need to be hospitalized. Seeing so many older people dying from Covid here, made my decision here. DH and I want to be here for a good long time, but have a life as well.

I am so sorry that a nice trip to the mall does not feel safe for you these days. We have seen that occasionally here, but nothing that would keep me from going into a mall.

have a good day friends

Our mall still has JCPenneys and Macys plus smaller stores. We haven't been there in years since Sears closed. We both liked Sears, DH for the tool department. Bon Ton closed also, and that's where they put the casino. Rumor says the casino will eventually take over the whole mall. There has been several shootings in local malls but not ours yet.

DH also doesn't care if our sauce is from a can but I do home made occasionally. I put browned ground meat in mine but add meatballs to the sauce for extra protein. Its DHs choice to eat them or not. DH is not crazy about spaghetti but it is the red sauce he doesn't want. He eats lots of noodles and Pastaroni, which has other sauce, like Alfredo. Spaghetti with red sauce has been a favorite of mine forever. I rarely order it in a restaurant though because they charge a lot and its so cheap and easy to make at home. When I go to a restaurant I like to order something I don't get at home, baked fish, barbecue ribs, Asian. I would love to try Indian food but none around here. I am a foodie, and love to try new things. DH is the opposite. Never tries any new foods.

I want to eat light today. We missed 2 weeks at Rodneys and we're going today. They have so many things I like. Only 3 for DH, one of which is a hamburger.
__________________________
We went to Wal-Mart for milk and bread and spent $54. It was all things we will need eventually. DH wanted to go out for breakfast but they were crowded so we went to Wal-Mart first and breakfast afterwards. It worked out well because any later and Wal-Mart would have been very crowded. Not too bad at 10:00 am. By the time we ate it was 11:30, A good time for me, and I was hungry and food tasted good. I had eggs and sausage, no bread.

We have huge open mall here and some other smaller ones about town. Years ago before I moved here they had a horrible shooting in a club in or near our big one but I think it was caused by a fight that rose between 2 motorcycle gangs. Other than that we haven't had any other shootings or problewms like a lot of places have and hope we don't. So at this time I have no problem going there except that it is too far away from us to go unless we are going to one of the stores for something specific. We used to go to a restaurant over there when DH had to get checked when he was on warfarin. When we had to switch to this doctor, he put him on Eloquis so we don't go over there any more. Also the steakhouse where we go on this side of town used to have one by that mall and we would meet DS over there so they didn't have to drive over here. But they closed that one down so now we have no reason to go. So far we haven't had any major problems here that would make me afraid to go out although I am careful as I always am during Christmas holidays when out by myself.

Mad We haven't heard from our doctor's office about the booster yet. I left it up to what he wanted and as far as I know our names are on the list to get the booster. I read an article on how vaccines and viruses work which has given me peace of mind either way. DH and I are pretty healthy and our immune systems are excellent so I would assume our doc would have those who aren't who are at higher risk than us will get the booster first. When they call with an appointment, we will go.

I got up early and went to the store before going to beauty shop so I was able to come home and put pork chops in the crockpot. I really am enjoying my crockpot cooking these days. Beef is pretty expensive right now, but I got a nice chuck roast that I thought was not so bad because I could cut it in half to get 2 meals out of it. So they are in the freezer.

Hope everybody has a nice Friday.

Funny,,but there was just a story on the evening news about our mall and how the casino has brought back so much business. They showed the mall and all the customers. Of course, it is 3 weeks before Christmas! We don't go there anymore because anything we need we can get closer to home. Also its a lot of walking. I am used to having a shopping cart that acts like a walker.

I did well with food today, but for some reason I got potty issues after eating my eggs and sausage and off and on all day. I think I took Metformin on an empty stomach and didn't eat for an hour and a half later. I hope to weigh tomorrow and show improvement.

Carol Sue I hope you are over the potty issues. I haven't had them in a while, but not losing as good as I do when I have them but I still don't want them.

I didn't weigh this morning because it was so early when I got up. I haven't been exercising either. I need to start doing them again. I think it makes a real difference in the weight loss and may be why I have been feeling so bad. Back has been hurting a lot today so that hasn't helped either.

Still not sleeping great. I thought the magnesium might have been causing it but I just read that it takes 72 hours for Magnesium to leave the body and I'm noticing other subtle signs that its gone. So I will go back to taking it again tonight. I was sleeping so well for a while. I don't know what caused the change. I started taking my blood pressure meds in the evening instead of morning so maybe that was it. I'm still napping in the evening sometimes.

Today I'm going to do some laundry and get some clothes boxed up to go to Goodwill and some others that are too tight packed away. I have to get them organized. I also want to exercise in between laundry loads. I hope DH doesn't want to go anywhere.

_______________________________

I had scrambled eggs and 2 sausage links for breakfast. MFP has 2 different entries for the sausage. I've been using the one that says 140 calories for 3 links that sounds pretty low but its the same on their website. The other one is 240 calories for 2! This is what I don't like about MFP,, but at least I get a list of what I ate for the day.

I think I am not losing because I'm not keeping my eating window. DH said he will eat spaghetti today so that's what I'll make.

I did 2 loads of laundry that are not finished yet. I gathered up 2 boxes of clothes for Goodwill. Made a pile for DH to use for rags in the garage. They are not nice enough for Goodwill. I packed up my summer capris. I have way too many but when I get them out next summer I will decide what to keep. And I have a lot of tops that are too small but I hope to wear them someday. I have high hopes!!

I didn't do any exercise but I still might. I got some exercise lifting and sorting the bags of clothes and I was beat, but after resting I'm ready to go again.
