Okay, what's on TV tonight? They are saying at my SOAPeSCAPE forum that Moonlight was cancelled. :( I LOVED that show.

Hey gals!!
I'm back from my long weekend trip up north and am I in pain!! I finished my first official 5k in 40 minutes and 2 seconds. After doing the math, the quickest I have done a 5k on the treadmill is 43 minutes 30 seconds. With this being the first time I have done the 5k on the road, I was aiming for 35 - 45 minutes, figuring closer to 45 minutes so I am very happy! I jogged the 1st mile non-stop (have not been able to even do that on the treadmill) and finished the first mile in 10 minutes, yeah I slacked the last two miles...I wore myself out right away which I had been warned not to do. I was able to jog another mile though, just at a much slower pace.

My 8 year old ran 1.2 miles later in the day for the Youth Run. He was in 2nd pace in his age division for much of the race but then he tripped and ended up coming in 7th (obviously not the most coordinated kid ;) ). He ran the 1.2 in just under 10 minutes. I felt bad for him though because the last .5 mile was against a VERY strong wind, when I ran in the morning there was NO wind. Had there been no wind, I'm sure he would have shaved off at least a minute if not more, that's how strong the wind was.

Now I'm going to have to catch up on the challenges and put in my times. I didn't get to exercise this weekend except for my 5k...and any calories I burned yesterday morning I drank away last night with friends downtown bar hopping. :o

Today's menu:
B - Bowl of Kashi Go Lean cereal with milk
L - BLT sandwich (2 slices bacon, 1/2 tomato, green leaf lettuce, pepper, 2 slices toasted bread)
S - String cheese
D - Roasted Chicken Breast (1/2 breast), peas, mashed potatoes
Water - 8 - 8oz glasses
Exercise - 65 min. treadmill, 10 min. presidents challenge, 20 min. bowflex

Monday Plan:
B - Apple cinnamon oatmeal, small banana
L - Ham & Cheese sandwich with lettuce and tomato, 10 baby carrots
S - small apple
D - Spaghetti, garlic bread and salad
Water - 8 - 8oz glasses
Exercise - 60 min. treadmill, 20 min bowflex, 10 min crunches/pushups/squats

BUTTERNUT MAC 'N' CHEESE
Hands-on time: 30 minutes
Time to table: 2-1/2 hours
Makes about 4 cups, easy to double or triple
SQUASH
1 two-pound butternut squash
Preheat oven to 400F. Cut squash in half, lengthwise and rub cut side with olive oil. Place cut-side down on a baking sheet and roast for 60 - 75 minutes or until completely cooked and soft. Scoop out flesh while still warm and break apart with a spoon. Timing-wise, finish the squash roughly the same time the pasta and the sauce is cooked so that it's still warm. [Alternate method, how to roast a whole butternut squash: Place the whole squash, uncut, in the oven on a baking sheet. Roast for 90+ minutes until a knife inserted into the thickest part of the flesh (not where the seeds are) slips in/out easily. Slice in half and scoop out the seeds, they'll be harder to find so watch carefully.]

NOTE: For a 'less squashy' and more 'mac 'n' cheese' version, use half the roasted squash in this dish, reserving the other half for something else.
MACARONI
Salted water
4 ounces (about 1 cup) elbow macaroni
Cook macaroni in salted water. Let drain well. Timing-wise, finish the pasta and the sauce about the same time.
NOTE: For a 'more mac 'n' cheese' version, use up to 16 ounces of macaroni.
SAUCE
1 tablespoon unsalted butter
1 small onion, chopped small
1 teaspoon nutmeg
1/2 teaspoon white pepper
1 tablespoon flour
1 cup whole milk
16 ounces cheddar cheese or any good melting cheese (if in a brick, sliced or cubed)

In a saucepan, melt the butter on MEDIUM heat til shimmery. Stir in the onion as it's prepped, then the nutmeg and white pepper, cook til onions soften. Stir in the flour and mix well. A tablespoon at a time, add the milk, incorporating each tablespoon well before adding another. (If you add it all at once, or without working in each time, there's risk of ending up with a lumpy sauce.) Stirring often, let the sauce come almost to the boiling point, it will thicken slightly. Add the cheese and let melt, adjusting temperature so that the sauce won't boil. (It's not a disaster if it does, since it's going into the casserole, but it'll look curdled.)

COMBINE In a large bowl, break the squash apart, mashing it really, with a wooden spoon. Stir in the hot, drained pasta and combine well, distributing the squash throughout. Stir in the sauce and combine well. Transfer to a greased baking dish. If you like, sprinkle the top with pimenton or paprika. If making ahead, let cool to room temperature, cover and refrigerate.

BAKE Return dish to room temperature. Bake at 350F for 30 minutes til hot and bubbly throughout. To add color to the top, place under the broiler for 2 - 3 minutes, watching carefully so not to burn. When covered with foil, holds its temperature for a good 30 minutes.

I hope everyone is doing well.

I did good today. I stayed on plan and finally got some exercise in. Jared is feeling a whole lot better and is becoming less clingy. He wouldn't let me put him down at all before so it's good.

I'm weighing in in the morning and hoping that I'll hit my 40 lbs lost mark. I've been kind of stalled for long enough now. I really want to see some lbs drop.

Mel, I took your advice and started Journaling/Blogging. I have 2 now. The 3fc's one and the myspace. I have just found out that on myspace you can make your blog post a Diary, and it'll be private and no one can see it but the writer. You have that option, and also to let friends see and so on...So I wrote out some angry feelers I've been having towards my Mother and a certain ex friend who will not leave me alone with ALL intentions on them seeing it, then I got to the end and saw the "Diary" option and took it. I feel better just getting it out. No need to hurt other peoples feelers right now...if ever.

Good evening all! Just checking in quickly. I'll be away from the computer tomorrow, and wanted to say hi to all! I've done pretty good with the eating today except for a tiny plate of food (not nearly full) at the boss' daughter's graduation party.

i plan on doing the pres challenge...i will work on my numbers in the morning during my workout....i got my new WATP 3 and 4 mile dvds and the fast firming (toning) dvd and pilates....gonna work on those this week ;) and if i stay on plan for my workouts mon-fri i should get 341 minutes this week.....and earn my fourth badge of the beach hop :D

Andi - great job on the C25K, when I used to run more (trying to get back into it now!) I used to take the bibs and write the date, my time and the name or location of the race on the back, then you can look back and see your progess easily. DH actually put them on the wall in his shop, I think he was proud of me!!

Armywife, looks like you are doing great, good for you. I would love to find some WO buddies around me, have not been able to do that yet!

I am working on getting back to the end of week one, I was so far off last week and am back to starting weight, but that if just treading water, need to get it in gear. Just did 2 rounds with the elliptical, an abs video, 50 upper and 50 lower crunches and 10 pushups. Tonight I will weight train.

Breakfast - yogurt & bear naked granola
Snack- string cheese
Lunch - salad w crumbled turkey burger for protein
Dinner - Grilled Pork chop and veggies
Night time snack - Crystal light freeze pop maybe?

Monday 5/19 -
B- Cheerios & 2% Milk, coffee
Flaxseed oil tablet
L- Peanut butter & banana on Double Fiber toast.
S-TBA
D- Heartland Plus ALA Omega 3 Spaghetti, Tomato meat sauce, Yellow Squash, Zuchinni & onion cooked in Olive oil
7 to 8 glasses of water

I'll be exercising later on. I may try and get up to the GYM this evening and and do the Presidents Challenge, and make Jess cook dinner. I'm down .08 on the scale and I'll take it. At least it's going down! :)

Diva and Tina, I love the show moonlight too :drool: It sucks they're cancelling it. I had no idea. Maybe they'll bring it back again next year...sometimes they do it. :crossed:

I'm crossing my fingers and toes! I LOVE that show. Maybe some other network will pick it up. They are always cancelling the shows I love and replacing them with crap. *sigh*.
