I'm making another stir-fry for tonight, but with garbanzo beans instead of tofu. I bought several bags of stir-fry vegetables at the market the other day for 99c a bag, and I have to use them up!

Company for dinner: shrimp and feta starter, orange/soy chicken, brown and wild rice, green beans, grilled tomato, lettuce and cucumber salad, blueberry pie and ice cream - just for him! I don't do pie - just make them.

Tonight we're having Vegetarian Tofu Chili with salad. I will make corn bread muffins for the kids. Not very summery but it's a family fav.

Tonight, it's Green Lentil Soup. I posted the recipe in our forum under P1 soups, from my Sister, so I believe it has Aurveydic properties.

Today is the first warm day we've had since May AND...it's sunny out too!
Tonight's supper is grilled chef's cut salmon with a Meyer lemon marinade and baby brussels sprouts and garden fresh tomato slices. Dessert is cherries which were on sale for $1.67/pound.

I'm having a Caesar salad with some leftover chicken from last night and some green beans. Raspberries for dessert! Yum!

Chickpea & Vegetable Vindaloo with yogurt. I learned the hard way to go easy on the Vindalooo paste last time I made this.

I have this DVD and have been trying to watch it for weeks. I saw a part of it before and have been trying to find time to watch it in its entirety.

Sandy
Baked chicken sounds good. Are you on P1 or P2? Have you ever tried the Taco Bake from the recipe threads? It was my fav on P1.
