Morning CHICKIES! Came in EARLY today b/c of the weather...have too much to get done so staying home is not an option. ROCKER'S scared http://smileys.smileycentral.com/cat/36/36_1_7.gifto drive in the ice and snow...I can't keep relying on rides to work in this kind of weather so up and out I went! Brought my lunch too...getting home will be a different story. Hope I don't get stuck here but just in case I dressed warmly! Thing is, now I'm SLEEPY! LMAO...woke up at 4am. Grrrrrr.

My evening was pretty dull, stayed home to watch TV with K. He's been complaining too much lately of my not spending time with him. Then when I stay home and do nothing but dedicate myself to him; What does he do? Go to his room and watch TV in his room. So I grabbed my pillows and went to his room and crashed on his bed. That was it for my wonderful evening. Oh, almost forgot the Chicken Stragonoff was great, I'm going to try it with beef next time. LMFAO! ROCKER: Feeling better? I hope you don't get stuck there - that'd be horrible! What's for lunch? Hi TWIDDLE & DUTCHIE. Here's a recipe for you guys... Cider-Baked Apples with Dried Cranberries 4 large apples (about 8 oz each) 1/2 cup dried cranberries 1/4 cup sugar 1/4 tsp ground cinnamon 1 1/2 cups apple cider 2 cinnamon sticks 1/4 cup of walnuts, toasted and chopped fine (optional) 1. Adjust oven rack to the middle position and heat the oven to 375 degrees. Using a vegetable peeler, remove a strip of apple peel from the top of each apple. Use a melon baller to remove the stem and core of the apple, being careful not to cut all the way through the blossom end. 2. Place the apples in an 8-inch square baking dish. Sprinkle 1/4 cup of the dried cranberries evening among the apple cavities. Mix the sugar and cinnamon together in a small bowl, then sprinkle in and around the apples. Pour the cider into the dish, then add the cinnamon sticks and remaining 1/4 cup dried cranberries. 3. Bake the apples until they are tender when pierced with a paring knife or skewer, 45 to 55 minutes, brushing the apples with the cider several times during baking. (Be careful not to overbake, or the skins will split.) Transfer the apples to a serving platter and tent with foil while making the sauce. 4. Pour the cooking liquid into a small saucepan. Bring to a simmer and cook until the liquid has reduced to about 1 cup, 7 to 10 minutes. Remove and discard the cinnamon sticks. Spoon some of the sauce over each apple and sprinkle with the walnuts (if using). Serve, passing the remaining sauce separately. 4 servings per serving: 200 calories / 0 grams of fat / 3 grams of fiber per serving with walnuts: 250 calories / 5 grams of fat / 4 grams of fiber |

Okay, new resolution. I'm going to NFs every week for dinner!! I had WI this morning. Based on WI during the week, I was hoping just to break even. Well, I had a 2-pound loss! (Granted, it was the 2 pounds I gained last week, but still...) I couldn't believe it! I weighed myself twice just to be sure, and there it was!! Woo hoo!!! Almost didn't get up to run this morning. Had the alarm set a little bit earlier because of the weather, and when it went off, I hit the snooze an extra time. By the time it went off again, I felt so guilty that I got up and hit the treadmill. Apparently this is almost habit now! Not much else going on. We've had the same thing for dinner every night this week. I made a Mexican Casserole on Monday, which made 8 servings. DH likes it so much that I haven't cooked anything else! Maybe tonight we'll have something different. Maybe. SPILLIE - Sometimes just spending time watching TV together is nice. At least you didn't sit out in the living room while he was in the bedroom! Glad to hear dinner was good, too. It's definitely on my list of things to try. ROCKER - WAKE UP!!! :D Hope you make it home okay. DH now has to give someone a ride every time there's bad weather. She always gives him something for his trouble ($ or movie tickets or something), so it's not a big deal. I thought all we were supposed to get was rain, so when she called last night, we were both surprised. Woke up this morning, looked outside, and there was nothing. Turned the news on, and saw all of the school closings. WTF? I guess it's worse out west than it was for us NE. It had started hailing/raining by the time I went to the train station. No slippery spots until I pulled into my parking space...I almost slid into the car next to me. Yikes! I had no idea it was even slippery at all!! Oh well, no biggie. Apparently I'm in a rambling mood this morning. I'll try to stop. Hope you all have a safe and good Thursday! |

Viva can you revise that recipe to be done in the crock-pot. I forget how to turn on my stove and oven. :D Oh, for the Chicken Stroganoff; try seasoning your chicken first with some kind of poultry seasoning. That part of it came out a bit bland for me. I had to add a little bit of salt and pepper on my plate. TWIDDLE congrats on the loss, that's awesome!! I guess I need to go to NF's to get some of that FF food. |
Spillie...in all seriousness you probably could do that recipe in the crock pot! I'm not sure what the cooking time would be...but you could give it a shot.

I'm sure you could do it in the crockpot. Just set it on low, and keep your eye on it. I'd guess 3-4 hours? But that's just a guess. |
