I'm finally back! Thanks for your well-wishes. I'm still not 100%, but came into work anyway. I was almost in yesterday, but at the last minute decided I was better off staying home. Nothing too pressing here at work, so I didn't miss much, thank goodness. Luckily my illness has left me with little appetite, so I haven't been eating much at all. Quite odd, as I usually eat out of boredom, and being home for 3 days, I was quite bored. But I didn't. Nothing sounded good to eat, so I didn't bother. At official WI yesterday, I was down 1.5 lbs...woo hoo!! This morning I weighed myself and was down another 1.5, but we'll see if that sticks until next Thursday. I have a feeling once I'm 100%, I'm going to be ravenous. VIVA - this is for you: Spanish Rice Serving Size : 6 Points: 3 * 3 cups chopped canned tomatoes * 6 ounces uncooked instant brown rice * 1 cup chopped green bell pepper * 1 cup chopped onions * 6 slices crisp cooked bacon -- crumbled * 1/2 teaspoon ground cumin * 1/2 teaspoon garlic powder 1. In large nonstick skillet sprayed with nonstick cooking spray, combine tomatoes, rice, bell pepper, onions, bacon, cumin and garlic powder; bring to a boil. 2. Reduce heat to low; simmer, covered, stirring occasionally, 30-35 minutes. Hope it's good. I haven't actually made it, so I have no idea, but it sounds good (sans bacon, for me). BTW, we had the paninis on Monday...OMG...they were awesome! I don't have a lot of room in the freezer, but I think I need to get rid of some things to make some room for more of them. Looks like Giant will have them 50% for this upcoming week, as well. ROCKER - Enjoy your day off on Monday! DH has off, too. SPILLIE - Have a wonderful trip! I'm so excited for you!! TGIF!! I am very sleepy today and I can't seem to snap out of it. I wish I could take a nap. Yikes. It's so early in the morning to be saying that. Hopefully today will go by quickly. VIVA: I go to the JC centre and get weighed in there. You can also have the food sent to your house and do JC from there, but I'd rather get weighed in at the centre and get the food there. I didn't like a few things that were on the menu, so I looked it over first and they made the adjustments. They just substitued for something else. ROCKER: So far, my first day went well. I felt like I was eating all the time, but I was never starving. I am on a 1500 calorie diet right now. They said I will go down to 1200 once I reach a certain weight. I forget how much. When they asked me what my goal weight was, they had on their computer that I should be around 125-154 lbs. I just had to laugh. There is no way I would EVER be 125. I could only wish to weigh that much. As for 154, that's kind of hard, too, but I said for my body build I would be happy with 175. So, that's my goal. I really hope I can make it there. It seems so far away right now. Even if I reach 200 I'd be happy, but that's still too much. Little steps, I guess. SPILLIE: I am sorry, I must have missed the conversation. Are you going away? Thanks for the recipe, TWIDDLE. I won't get to try it this weekend (I don't have everything I'd need, and I'm NOT going to the grocery store again...been there WAY too much and have spent SO much money!). Glad you're feeling better. As for the Panini's...I swear to you I must have 15-16 in my freezer in the basement so I think I'm good! Which Panini did you try?
ROCKER: Lunch today is Turkey & 2% Pepperjack cheese on lite bread (3), FF Cherry Jello (0), and FF Sour Cream and Onion Pringles (1). Have a safe trip, SPILLIE! Have fun with DH & DS. I'm so happy you get to go see him!!! Best of luck DUTCHIE!!!! You can do it! I am SUPPOSED to be between 131 and 164...they say about 140 for my height. The lowest I've ever gotten was 148 lbs. That is where I'm aiming to be! Keep your head up - you have our support :) |
I think it was the Southwestern Chicken, or something like that. We also have the steak one in the freezer. Part of the problem is that I have to buy 2 for every 1 that I want to eat, since DH eats them, too. So our freezer gets filled up quickly, but only half of it is for me! I've contemplated getting another freezer and putting it in the garage, but that hasn't happened yet, and probably won't anytime soon.

Oh okay - the Southwestern Chicken was my least favorite one (but I still like it)...so I can't wait to see what you say about the others! My fave is the steak & cheese, then chicken club, then chicken, spinach and mushroom then the southwestern one.
Oh I know what you mean about the freezer. DBF can eat a lot so I always have to stock up, LOL. My extra freezer is a life saver. I wouldn't be able to have much frozen stuff at all if it weren't for that! |
And my freezer is half-filled with "good ideas" that never became anything. Like "Oh, I'll buy a bunch of bananas and strawberries, freeze them, and then use them for smoothies!" Never made them. Or "Oh, I keep seeing recipes using frozen bread dough, so I'll buy a bunch so I have it on hand when I see those recipes again!" Never saw them again. But I can't just throw it out, either (back to that whole can't-waste-food thing...).

Hola Chicas, Just a quick Hi from me. I've been cleaning and getting everything off my desk so that when I get back it won't be piled up. I mean it's going to be a mess, but at least it will be all new things. I'm so far behind on getting things done at home, I have everything laid out all over my living room and ready to put in the suitcases. I still have to do my hair and nails tonight and we leave at 3:30am. This is going to be a long night and long day tomorrow. So, this will be it for me as I am trying to get everything together here at work and they are panicking over every little thing. TWIDDLE so glad that you are doing better, rest up over the weekend so that you can feel up to the drinking fest when I get back. VIVA I didn't even get to eat the pork chops but they smelled great. By the time I was able to eat them, I was too tired to even eat. DUTCHIE sounds like JC is the plan for you. Good luck with it and I hope you get the results you want. You have mail by the way!
